You are a "Joy" to watch. Descriptions are clear and concise. I am finally learning metrics because of you. I have always rolled my cookies in the larger crystals of colored sugar. A lot of kids don't like or can't have nuts and no egg whites. My son and daughter-in-law make a lot of these (10-12 Dozen) and use a small pastry bag for filling the cookies jelly AFTER baking.

I love how the cookies look after rolling them in chopped almonds. I just almonds. Where I'm from we use half butter, half coconut oil and almond extract. We don't roll them in almonds but fill them with ducle de leche, guava or pineapple. Next time I make these I'll roll them in almonds. Thank you for the recipe and explaining so well.

Oh my goodness, I made these for Christmas and now I think they're my favorite cookies now. They are delicious! I made them with toasted pecans and used the European style unsalted butter. Yum!

Hi Stephanie I love your channel and I learn a lot from it . I do have a question about using the convection in the oven ( mine has it but I never used it ) if I want to bake something like at 350 do I set it on convection and then 350 or do I have to use 350 convection convert . As far as I know convection is a bit hotter then regular settings ( that's what my instruction book says ) . I would appreciate if you could help me with that . 😃
Generally speaking if your oven does require a correction (and not all do now) you would reduce the temperature by 25F or 15C. But usually the manufacturer will recommend a reduction.
Are these also called Timble cookies? I learned to bake those in a baking class 2 years ago and it looks like the same method and ingredients except we made the thumb prints before and baked and as soon as it came out the oven we put the jam in.
Yes, that is what my Mom called them. She used to use a thimble to make the indentation. And, as you say, you can bake them without the jam and fill them after they are baked.
Hi . I am a big fan of your baking. I wanted to ask you something, though not related to this particular recipe. Could you pls clarify this- Both churros and eclairs are made of choux pastry,what makes the difference in creating a hollow inside eclairs ? I mean, churros aren't hollow from inside when we either bake or fry them and that's why for filled-in churros (with pastry cream or whipped cream),we pipe out the inside with a straw and create a hollow to make space for the filling. While with the same choux pastry base, when we bake an eclair or a profitrole puff,it's hollow from inside and we just let the steam out to retain the shape and texture. Will be really glad if you can put lights into this. Thank you in advance

Yes, you can bake the thumbprints without the jam. When they come out of the oven you may have to use the end of a wooden spoon to press down the indentation.
