Instant Pot or Foodi Cheesy Chicken & Rice

Larry Under Pressure presents a delicious, quick, nutritious dinner in a pot. This is all you need!! Your protein, starch, yellow & green vegetables are all cooked together in this dish. Will easily feed 4 - 5 or can easily be scaled up or down to feed more or less. Give it a try. You'll be glad you did!!
RECIPE:
Ingredients:
2 Pounds chicken beasts, tenders or thighs cut into 1/2 inch cubes
2 Tablespoons Olive Oil (for sautéing chicken)
1/2 Cup cut up onion (I use dried onion flakes)
2 Cloves crushed garlic (I use bottled, prepared garlic)
1 Teaspoon salt
1 Teaspoon pepper
1 Teaspoon thyme
2 Cups well rinsed white rice
2 1/2 Cups of chicken broth
1 Can cream of chicken soup
1 Small bag of frozen mixed vegetables
1 Cup shredded cheddar cheese
Directions:
Pour olive oil into pressure cooker and set on sear/sauté. Once hot, add cut up chicken and stir. Cook chicken for about 5 minutes until it begins to brown a little on the edges. Now add the onion and garlic to the chicken and stir. Cook for an additional 3 minutes. Add salt, pepper, thyme, rice, soup and stir. Finally, add the frozen vegetables and stir well making sure no rice is above the water.
Close the top, make sure the steam valve is on seal, and set your pressure cooker on HIGH for 8 minutes. Do a quick release when time is up. After all the pressure is released, open the lid and add the cheese. Stir well to distribute moisture and cheese.
Plate this dish and sprinkle with additional cheese and some chopped parsley to make it look good.
