the biggest tip i’ve learned from making mine (started off with bobby’s and gradually modified over time), is the more you blend the eggs, the more they fall and the denser they get. 20 seconds was way too long. blend all the other ingredients first, then add the eggs and just pulse a few times. they should NOT be frothy, and that’s probably why keto connects version was creamier (in addition to the foil). hope that helps someone!
My egg bite recipe is 6 eggs, 1 cup cottage cheese, 1/4 tsp salt, mixed in the blender until smooth. I use regular size silicone muffin cups, put a little gruyere in the bottom, fill about half full with egg mixture, add either ham or bacon (finely diced) and top with a bit more gruyere. Bake at 350 for 15 to 20 minutes (until the tops dome slightly on all the egg bites. I get 18, a serving for me is 2 to 3. They freeze beautifully. I put two or three in snack size zipper bags and freeze, thaw overnight in the fridge, reheat for 30 seconds in the microwave. Super creamy and delish. Much than S Bucks with all their potato starch and other crap. And much faster than sous vide. Gonna have to add a bit on onion when I make the again this weekend. And yes, I make them every weekend 😂.
Egg bites always feel like a lot of work to me for some reason. However, as I watched you I realized that my method of doing it is the only way I’d want to do it: I make my recipe and pour the egg mixture over a half slice of bacon in a 4 oz mason (jelly) jar, put the lid on (not too tightly, but tight enough so the water can’t get in and gases can get out) and drop them into a sous vide bath. I can make a mountain of then, and they keep a long time in the fridge. Super efficient way to do it, and nothing beats the custard-like texture a sous vide bath produces. (Thought having something like a custard was the point of sous vide?) I was absolutely shocked to see how many carbs the Starbucks version has! They add all these starches to it, I suspect because they are not really made sous vide and they need the starches to produce the custard texture.
@@CindaMurphyRealEstate The recipe I use is from a web site called “This Old Gal” (except that I just use cheddar instead of fancy cheese) but I really think any good custard-based recipe will be as good as Starbucks (and maybe better) if you do it sous vide vs. doing it in the oven.
Hi Wes. I tried Chris Cooking Nashville’s carnivore quiche. He puts gelatin in his and the texture was amazing. I think you should take a look at his recipe as well. Much love! ❤️
I suggest putting the pan of water on the oven rack first then place the pan with the eggs in it. That way you don't need to worry about spilling the water. I know the recipe calls for covering both pans with the foil. Maybe you should have only covered the egg pan to keep the eggs from being watery. I've made a cheesecake in the instant pot and the cheesecake pan gets covered with foil both top and bottom. That prevents the steam from falling on the cheesecake.
Omg I made them, instant pot method, so good. My partner ate some, loved them, then I told them what was in them ...as soon as he heard cottage cheese he decided they were "healthy" and boom! no longer liked them! Yes feeding him is like trying to get a toddler to eat 😂
My recipe is similar to the flavcity recipe, but I don't add the shredded cheese to the blender. I add it to the cups with the bacon. I think the onion will be a Fantastic addition to these when I meal prep this weekend. 😊
We use silicone cupcake liners for our egg bites. They are a lot easier to clean than the cupcake pan! I get it that there may be a slight texture tradeoff, but I don't care that much
My recipe is for 12 muffin silicone cups. Large deep baking pan. Use soften butter to lightly grease cups. Put a small amount of tilling and a combination of baby Swiss and sharp cheddar. In a blender 7 eggs 2 tablespoons heavy cream 1/2 block 4 oz soften cream cheese full fat soften in microwave 10 sec. Salt 1/8 teaspoon and a pinch of pepper. Blend on high until frothy and light. Pour into cups. Muffin pan should be already on the deep baking sheet. Place in preheated 350 oven with rack pulled outpouring nailing water to almost the top close oven a bake u til just set. About 30 min. Do not over bake. Just barely set. Yummy. Cream cheese way better than cottage cheese. I’ve tried many
Thanks! Will try!! One benefit of your recipe is that it uses cream cheese. I can’t eat dairy, and I can get really good vegan cream cheese. But there’s no such thing as vegan cottage cheese.
I use a basic recipe (1/2 c cottage cheese, 4 eggs, s/p) for making 7 round cups, add a dollop of chili oil sauce, a thin slice of onion, and put in my food processor. Then I pour into silicone bagel molds, adding cheese and ham. Using bagel molds it makes 12 flattish ones, perfect for making breakfast biscuits

Im definitely taking your suggestions and going with onion and whisking, but also using the cottage cheese for lightness and as for me the whole point of egg bites is that you can eat them without a fork, will opt for the flav cooking method so they are not gooey (yuk). My grandfather always added a hint of baking powder to his scrambled eggs to make them fluffier. Seems like a good addition to the Keto Connect recipe.

You needed to have the aluminum foil facing the other way. Foil should always be put shinny side in. It reflects the heat inward better than the other side. These seem easier than I would have thought. Thanks!

The solution to getting the egg bites out of the cup? SILICONE CUPCAKE LINERS! I use mine all the time for low-carb baking. Paper cupcake liners are terrible for low-carb cake recipes, and I'll bet the keto-connect bites will do wonderfully in them.

The egg bites at Starbucks have all kinds of starches in them, potato starch being one. Definitely healthier to make at home. It's just eggs, cottage cheese, bit of salt, bacon or ham, and cheese (gruyere is the creamiest but I've used cheddar and they were still great). Takes 15-20 minutes to bake and you can make a ton and freeze them. I make them once a week and eat 2-3 every day. 😊

Or only cover the actual egg bite pan. I make custard in an egg steamer. I cover it then dish with foil then I put it in the steamer then put the lid on. It keeps the steam out

I used 4 eggs and the cottage cheese in blender. Ad cheese and onions, etc to the cups themselves and used the 7 cup Pressure cooker and it filled up all 7. they were so good and tender in the pressure cooker and was done so fast.
Love to make my egg bites in the InstaPot! They are smaller, but that means 3 bites instead of 2. 😉 High proteins cottage cheese makes a difference to me so in it goes. I’ll use less cheese (frozen then shredded) and find air fryer ham cubes hits the spot instead of bacon.
I have an idea with the keto connect version. When you wrap it with the foil what happens if you leave a small opening so the steam can escape. Therefore there wouldn't be any standing water on top of the egg bites.🤔🤔I want to also add a suggestion. Combine the egg and cottage cheese in the blender. And then do all the other ingredients like keto connect and see what happens.
I was thinking as you were making the first one was to just blend the egg, salt, possibly corrage cheese, but i would leave both cheeses out and mix them in after the eggs are blended.
Ever since I discovered cooking eggs in a water bath, I’ve been doing ever since. It makes the eggs so silky and doesn’t dry them out. Maybe the Keto Konect could be cooked without foil, but still the water bath.
nice video wes. i make mine in the instant pot and they turn out little more congealed and custardy than keto connect but they don't have the moisture on top. i agree that bobby's is a little over processed for these delicate bites. i made mine before i ever tried starbucks and i'm def not a fan of theirs.
To be fair to Bobby, this was a copycat Starbucks battle, right? The ones at Starbucks don’t have streaks of melted cheese. There’s a difference between the ones you prefer vs the closest version to Starbucks. With that being said, I completely agree that being able to discern each component is important and I’m sure I would prefer the keto connect ones as well.
I was a little shocked! (Someone here in the comments mentioned that taking off the foil the last few minutes of baking might help dry them off a bit, and that sounds like a great idea!)

The second recipe is a lot like my recipe for quiche. As quiche, I really enjoy it. Can’t imagine it as an egg bite. (Actually, don’t really care for egg bites, so I guess I’m a bit biased. 😊)
I made my first attempt at egg bites last week and carefully buttered the muffin tin before pouring in the egg mixture and baking. After repeated rounds of soaking and scrubbing, the pan is still not clean. 😒 I’m pretty sure I’ll be using silicone from now on.

Try green onion version too. A lot less carb than onion and similar flavor.

I put water in the empty compartments of the tin when I bake. It may not matter much in a water bath, but it helps with even baking without.
Great tip! Also stops any stay oil from burning and sticking to the pan!

Or only cover the actual egg bite pan. I make custard in an egg steamer. I cover it then dish with foil then I put it in the steamer then put the lid on. It keeps the steam out

I used 4 eggs and the cottage cheese in blender. Ad cheese and onions, etc to the cups themselves and used the 7 cup Pressure cooker and it filled up all 7. they were so good and tender in the pressure cooker and was done so fast.

So add the onions but cook like the first set. I tend to prefer dryer over creamier.
That would definitely work! (Though, I MUCH preferred the creamier version!)
Onions have water too, so that might have helped with watery.

Love to make my egg bites in the InstaPot! They are smaller, but that means 3 bites instead of 2. 😉 High proteins cottage cheese makes a difference to me so in it goes. I’ll use less cheese (frozen then shredded) and find air fryer ham cubes hits the spot instead of bacon.
I have an idea with the keto connect version. When you wrap it with the foil what happens if you leave a small opening so the steam can escape. Therefore there wouldn't be any standing water on top of the egg bites.🤔🤔I want to also add a suggestion. Combine the egg and cottage cheese in the blender. And then do all the other ingredients like keto connect and see what happens.
I would think wrapping in the foil would keep them a lot more moist, and less dry, although I’ll bet they’re both pretty good
I was thinking as you were making the first one was to just blend the egg, salt, possibly corrage cheese, but i would leave both cheeses out and mix them in after the eggs are blended.

Ever since I discovered cooking eggs in a water bath, I’ve been doing ever since. It makes the eggs so silky and doesn’t dry them out. Maybe the Keto Konect could be cooked without foil, but still the water bath.
nice video wes. i make mine in the instant pot and they turn out little more congealed and custardy than keto connect but they don't have the moisture on top. i agree that bobby's is a little over processed for these delicate bites. i made mine before i ever tried starbucks and i'm def not a fan of theirs.
To be fair to Bobby, this was a copycat Starbucks battle, right? The ones at Starbucks don’t have streaks of melted cheese. There’s a difference between the ones you prefer vs the closest version to Starbucks. With that being said, I completely agree that being able to discern each component is important and I’m sure I would prefer the keto connect ones as well.

I dont usually use my "brownie" muffin pan because no matter how much I spray them, the eggs stick in the corners. I prefer a round muffin tin

If the pan you used for water oxidized from the eggs, you might line it with aluminum foil in the foture. The discoloration attracts to the aluminum
Victoria's Keto Kitchen just released a Supreme Keto Egg Bites recipe on her channel. Do a comparison between her recipe and the winner here (Keto Connect). The little machine Victoria used looks like it makes the whole water thing much easier, too.
I find the silicone baking cups don't over bake them, and slide out when completely cooled.

The second recipe is a lot like my recipe for quiche. As quiche, I really enjoy it. Can’t imagine it as an egg bite. (Actually, don’t really care for egg bites, so I guess I’m a bit biased. 😊)

I made my first attempt at egg bites last week and carefully buttered the muffin tin before pouring in the egg mixture and baking. After repeated rounds of soaking and scrubbing, the pan is still not clean. 😒 I’m pretty sure I’ll be using silicone from now on.

I would do Keto Connect water bath but do not tent with foil. I have water bathed Flav City but didn't tent and they were fine
These may be egg bites but neither compares to the Starbucks products. I’d be willing to have more carbs to get closer to that taste and texture. I bought sous vide machine on Black Friday JUST for this recipe.
