Wholesome yum has a pumpkin "cupcake" that seems to have the same bread-pudding or mushy-custard texture and is also similarly intriguing! Thanks for your testing and reviews, particularly using coconut flour!
@@HighfalutinLowCarb There were a whole mess of Bisquick impossible pies back in the day. Carbquik brought a few of them back but between the flavor, expense, inflammation, soy and finicky results, carbalose flour never really seemed to take off in the keto/low carb world.
allulose eill cause things to brown WAY faster than tjry should also. it caramelizes almost like sugar does... i live your thoughts and testing videos. thanks 8 biscuit wes!!!
Very true! Since these recipes were both written specifically for allulose, I assume the creators used appropriate baking times and temps for their recipes. They turned out well, but both did request the breads be covered halfway through! (This is also why allulose makes great caramel!) 🙂
Not sure why the first recipe had you put the sweetener with the dry ingredients. There’s a reason the sugar/sweeteners are actually considered a wet ingredient in the baking world. Gives it a head start on dissolving in the liquid resulting in a smoother texture.
You are correct. But, because this is a recipe review channel,I try to follow the written recipe exactly as written. That’s the only fair way to show how it will turn out to a regular person at home following the recipe. It would be unfair to change the recipe ingredients or steps and offer a review. Hope that makes sense!

To me as a European, I always have to translate the term "bread" to "cake" :-) I mean, banana bread, pumpkin bread and the like are more cake-like than actual bread. Anyway, I appreciate the quality of your videos, I love your honesty and wit and I sure would like to try most of the food that you prepare in your videos!

So if Your flour was not very 'dry' Your product would be wet but if her's was extremely 'dry' it might absorb to a much greater degree leading to a possibly more desirable product... 🤔 Food for thought. This is such a kind and thoughtful comment. Very good point about the “dryness” of the coconut flour! Especially since I keep mine in my freezer, and some of the zipper bags have that weird Velcro-zipper. I feel like those may let in moisture, but I’ve never tested it. I think the spaces between the velcro “hairs” may allow air and moisture to pass though, but I could be wrong. Thanks again for the comment! 🧡

I miss Starbucks pumpkin bread so very very much and that first option looks like it’s also easier to make as you don’t have to whip out the portable mixer. I just saw a cordless portable mixer that I’m going to investigate by KitchenAid, just FYI in case that works for you too.thanks for all you do to bring low-carb recipes into our lives.

Mel makes a tent for her peanut butter bread. So this was a good idea. I wonder if I took Mel’s peanut butter bread recipe and substituted the pumpkin for the peanut butter
I was worried about browning the top too ouch. A knife inserted in the center came out perfectly clean, which was her recommended test for doneness. But you are right that a little more time might have helped!
It can definitely have that feeling! I’m often find it’s better combined with a secondary “flour” like almond or even protein powder (as a flour substitute.)
I had wondered how well I could use my protein powder as a baking adjunct or alternative. Iirc Whey vs Casein and so forth function all a bit different. Coconut I've stuck to now using 1/5th of a recipe to 4/5 Almond overall. A little help for flavour without sucking up everu bit of moisture for 100mile radius. @@HighfalutinLowCarb
It's never struck me until now. But possibly soaking the coconut for a while. Until it's fully saturated, could work. I'll try it anyway, because I don't think it'd actually be much difference to overall sum of wet ingredients after
@SnailShoes yes protein powder works really well. So does adding gelatin. Check out @ketoupgrade , she has the best recipes for baking. She mostly uses protein and coconut

Coconut flour is always soooo dry. Every time I've used it. No matter how much liquid I add or cook it.
