    I just made these! Wow! So good. Because I'm a recipe follower, I guessed at your measurements for baking powder and salt. Perfect guessing! Never made these before...But now these will definitely be included in future meals! Thank you for the simplicity of this video!

    My dad always heated the griddle to about 375 and then waited till the bubbles were about 75% popped for a good cake. I don't know if others will like, but we always put a little less flower and went ahead and whipped the batter a little bit more because we loved the thinner cakes...Butter between each pancake, and a topping of good ole maple syrup would stick to your ribs until lunch time :)

      Louise, did you try them? I'm a cornbread lover and thus the cornmeal pancake recipe. The only way to make cornbread better is to cover it with butter and syrup...right?? Best to you. DFM

    Hi Maggie, I'm Maggie who is from Shanghai. I like your recipe. It's simple, easy and quick, which is I always prefer. I made some cornmeal pancakes last night. There're five ingredients I used, which are cornmeal, potato starch, some grounded ham, baking powder and milk. I also put pinch of black pepper, since I wanted some salty pancakes. ;)

      Excellent. If you want less texture or grittiness, let the cornmeal sit in the wet mixture for about 10 minutes before cooking. Best, DFJ

      My kid has celiac, so we use a lot of cornmeal vs wheat flour. One trick to these grains is allowing the batter to sit for 10 minutes or so. It allows the water to rehydrate the grains a little more

    AND thank you for the tip about oil not being needed.
    We use our own butter on pancakes too and having to have "oil" around for the mix is a nuisance and "yuck".
    NO MORE ! 8-)
    And about eggs .... (not "to chill or not to chill") IF you have ducks on your place, duck eggs make the most WONDERFUL baking eggs and when we have them we use them in all our baking and custards - a WORLD of difference.

    do 2 tsp baking powder and they will be fluffy! also a thicker batter will make them fluffy, about 1 inch high!

    A couple of things. Why does it seem like this pancake batter is almost exactly the same as cornbread or corn dog batter? Wouldn't it be better to let this batter set for about 10 or 15 minutes so the corn meal has time to absorb some moisture so your cakes aren't so gritty? No margarine only real butter but you use a can of non-stick spray. 🤔

      @thepatriotrocker8001 - good thoughts here. Indeed, letting the batter set for a bit would both let the batter rise a bit, as well as get more moisture into the cornmeal. Thanks for sharing! Best, DFJ

    Can I use corn flour instead of cornmeal? Would that work?

      I'm sure you could, although we've not done that as we like the texture of the coarser corn meal. We like the "grit" of the meal. Corn flour is simply a much finer grind of the corn, so you will get the same taste, just a different texture. Give it a shot and then send us a note back telling us how it turned out for you.       Jeffrey Hochstetter Jeffrey - I did a further search and found them. They were difficult to find as they are not called "measuring spoons" - they are called "measuring scoops". The ones we have possess the Ekco brand. What I found online look identical but are under the Norpro brand. It looks like the stock number is 3064, stainless steel measuring scoops. The sizes are 1/8, 1/4, 1/2, and 1 Cup. I just found them on Amazon for about $22.50 plus shipping by entering Norpro Stainless Steel Measuring Scoops. Enjoy!

      Alison, thanks for watching AND for writing! To chill or not chill eggs depends on a couple of things. Australia, Japan, Scandinavia and the U.S. pretty much all chill their eggs, while the rest of the world does not. This is because these countries wash the eggs, which removed the natural coating of the egg (called the cuticle). This makes the egg susceptible to salmonella infection, so they need to be chilled. The upsides include cleaner eggs to begin with, and a shelf life that goes from about 21 days to 50 days. European countries generally don't chill because of an extensive vaccination program in the egg industry where the egg laying hens are vaccinated against salmonella (which can infect the ovaries of the birds allowing salmonella be in the yolk before the shell is formed). So, if the bad bug isn't in the egg to begin with, the cuticle will keep the egg viable (and edible) and disease free for about 3 weeks, allowing a reasonable time to eat them. We are actually producing a blog entry on this subject, with more detail and more situations to make determinations whether to chill or not. Thanks again for watching!
