    “I’m using an artisan organic sustainable hipster cornmeal that was ground by hand with reclaimed stones”-I’m howling! I can definitely get behind these cornmeal pancakes because I’m not a fan of regular pancakes unless they are made really well. Thanks for sharing this recipe even if it was pilfered, lol.

      Ah yes hand ground corn meal. Rolled by hand on the thighs of maiden hipsters. This method imparts a fragrant lentil curry sweat overtone to the mix. Absolutely exquisite, and I'll use the word sustainable because you'll buy it if I do.

      Yeah but it’s funny he stressed about lemon seeds lol. Knowing he’s using a strainer.
      My only concern is I might want a thicker strawberry syrup which only requires a tsp of cornstarch. But maybe that thin syrup is good.

    The pancakes are much like our Greek tiganites,though my mother added feta in the batter while cooking,then served them with honey and crushed walnuts,after frying of course.

      So I made the recipe as instructed, but half I added feta cheese (plain ones for the kids). Served with sugared and sliced strawberries, plain Greek yogurt, honey, and toasted walnuts. It was incredible! Thanks for the suggestion, Steve G.

    That's how I make blueberry compote. I don't press it through a strainer and it comes out between a syrup and a jam. I grate in the zest of 1 lemon and the juice of 1/2 a lemon to give it some tang. I make some lemon sour cream pancakes to go with the blueberry compote.

      We do exactly the same way in TURKIYE when we cook compote and we also DO NOT press it through a strainer ..also add some lemon juice !

      I wonder why you can’t get buttermilk in Sweden? I have an idea for you. I recently found a powdered buttermilk mix that you mix with water. It works pretty good. I’ve used it in a few recipes now. I’m sure you can order it from Amazon. I get it from Walmart here in the states.

    Strawberry syrup is such a treat! I usually make compote using frozen berries instead, but fresh in season berries are definitely the best!

    you should try cachapas, they are also corn based pancakes. the best cachapas use some actual corn for the texture, and they go really well with more savory toppings like queso de mano or cotija cheese

    AWESOME. Just Sunday I made strawberry pancakes with strawberry-cream cheese spread in lieu of a syrup. Served with homemade beef breakfast sausage and scrambled eggs. My wife was very happy. You married men know that means a happy life.

    I love cornmeal pancakes so I'll definitely try pre-cooking the corn meal next time. I will have to thin out the batter some, however, since I actually cook my pancakes in a waffle iron so that all the little "cups" will hold more syrup.💖💖

    I had a cooking accident many years ago. Rather than adding vanilla extract, I used lemon extract. The combination of lemon flavored pancakes with maple syrup was awesome. I have to think that, lemon extract in these would be awesome as well. Because strawberries and lemon are great combination 🤤

    These remind me of fried corn meal mush of my childhood. My mom would slice cold firm mush, brown it, serve with maple syrup, She did the same with left over farina or cream of wheat.

    We made these today and they were as delicious as they looked! I knew I was going to like them but I was honestly shocked at how much I loved the combination. The pancakes were both light & creamy. We’re making these again but trying Steve G’s version with feta, honey & toasted walnuts!

    I made this recipe today (except the syrup). I wanted to adjust the ingredients for 1 or 2 persons, so I made 6 cornbread muffins instead of pancakes. I had made pancakes a few days ago with the same idea in mind for one or two persons. They were delicious, but I wanted to see if I could make breadlike muffins with my adjustments. And they turned out beautiful. And I added a some cayenne pepper, like Chef John usually likes to do. I have a gluten free diet, so I used gluten free flour plus 1/4 tsp of xanthan gum in the flour mixture. The amount was exactly enough for 6 muffins, I had to scrape the pan completely empty. That was fine, no waste.

    I'd like to share with you, my trick to make my corn bread corn fritters way better than anyone else's. I like to soak 1 cup of corn meal in 1 cup of milk with a dash or two of vinegary hot sauce for 20 minutes to an hour on the counter before I mix in an egg and a mixture of 1 cup of flour, 1 tbsp baking powder, 1 tbsp sugar, 1 tsp salt. I then fold in some whole kernel corn and some diced jalepenos, and deep fry tbsp fulls until golden and fluffy. They almost turn themselves thanks to the baking powder.

    Love your "pinch" of sugar! Pancakes look delish. Will be trying them soon, but not with hipster cornmeal. Hope the regular stuff works out the same.

    I actually just soak the cornmeal in whatever liquid I'm using to get rid of the grittiness; no cooking required. I've been using this trick to make my cornbread taste moister for a while now. That said, cooking the cornmeal probably is quicker than soaking, which is why getting the cornmeal in liquid is usually the first thing I do if I'm making cornbread for a meal.

    You can hull the berries with a metal drinking straw. Just push from the point of the berry to the stem. The straw will remove everything necessary if you aim right. Fast and efficient with minimal berry loss.
