  • Getting a perfect and stable whipped cream can be pretty daunting for some bakers. I used to have my fears back then as well wondering if it would melt even before I am done decorating my cakes. This is the same fear most bakers have and but having the right recipe just makes it worse and so they stay away.
    But I have come to learn, relax and just build my Confidence using whipped cream as a frosting with this super Stable recipe despite the hot weather here in Nigeria. It is suitable and highly recommended.

      Hi ma i use viyon powder,pls after following e one is to one ratio if i finish icing my cake can it stand with the fridge or freezer for 4 hours without dripping biko🙏

      @@benedictaappau3426 Hello, I haven't used the recipe with Vizyon but I believe having a fridge or freezer to keep it for that long, you're good to go. (Except you meant without, then I can't verify as I haven't used this recipe with Vizyon before.)

      Yes, you can store out of the fridge but you need to prepare as shown in my video so it's stable enough to keep up at room temperature.

      Amen and you too. Oh, I subconsciously did that so you all could see the reading but when I placed the pan, it didn't affect the reading else I would have set it back to zero.

    I have been baking for 2 years now. The only frosting I can find to cover & fill cakes is all the different buttercream recipes. We hate the way Buttercream tastes and how heavy it is. However it’s easy to work with. I dont care if my cakes don’t look perfect but they gotta taste great! Not feeling buttercream! My daughter would rather have the icing from the can than eat buttercream! 😢
    I hope whipped cream is the answer to not only covering & filling but TASTE & Texture!!!😊

      Oh thanks a lot ma. No ma, I was just wondering if it won’t melt in transit or melt before the client cuts it. You know some clients won’t cut the cake until some hours after delivery.

      @@adebimpeagunlejika1127 Alright, I understand. It won't melt in transit. You know this isn't the regular frosting and so needs special care so when you are done, you still have to chill for some time before delivering and then educate/inform the client on how to handle the cake. They need to know that it should be kept refrigerated until it's ready for consumption.

      Good afternoon Adeola, you're most welcome. I know people use gelatine for stiffness but I don't really know how the measurement works. You can try a small batch using your hamd mixer to see if it would be runny or not, that should help you decide whether to use gelatine or not.

      You could also use corn flour/starch or icing sugar that contains corn starch

    Have you tried adding in cream cheese to turn into whipped cream cheese frosting?
    The recipe I’m using requires cream cheese but I’m not sure if it works with the powdered whipping cream

Pls i don't have a measurement scale so i use 2 cups whipping cream (powdered) and 2cups of iced cold water but my whipped cream is just slightly sweet and it has some tiny seeds. Pls help ma as i am standing next to my mixer right now 🙏

    I discovered that you zero your scale without your pan on it.
    You suppose to zero your scale while the pan is already placed on it.

      Apologies for the late reply, your comment was held back by TH-cam. For this brand, there was no adverse effect. It was stable enough to stay at room temperature without melting.

    I think you need to place the bowl before setting to zero. You weighted the bowl before adding water.

      You're welcome Gift. I can't authoritatively give an answer to the first question as I don't use preservatives. To keep it moist, you can seal in (covering your Cake after baking to trap in moisture) and also freeze your cakes after proper wrapping in cling film. Buttercream recipe's available as a paid class for N3500 only.😊

      I just make and deliver to the client, I haven't kept for long but I have some little quantity left I can check with so I will give a feedback. No, you need a fridge, this can't be done without a fridge.

      I saw some brands on Amazon that you can try cause I didn't see the one I used. I believe heavy cream powder should work too, I saw those as well.

      Where I base is called fino cream(and there's another and another)....it took me ages 🙄 to know or understood it was same with naija favourite powder.
      try big baking stores ask as well ....ask naija bakers at your base they may know...
      Meanwhile I was using fresh heavy cream all this years.

      It will still be good.
      Just whip again before use and you're good to go.
