  • How to make a luscious mango bravo cake with cashews and chocolate mousse topped with chocolate ganache.

    Cake
    1¼ cup all purpose flour
    ½ tsp salt
    1½ cup sugar, divided into ¾, ½ and ¼
    6 egg whites
    1 tsp cream of tartar
    6 egg yolks
    ¼ cup water
    1 tsp mango extract (optional)
    Chocolate Mousse
    1 Dr. Oetker Double Chocolate instant mousse mix
    1 cup milk
    Meringue
    3 egg whites
    ¼ tsp cream of tartar
    ¼ cup sugar
    ½ cup cashew, finely chopped
    Frosting & Filling
    4 cups whipping cream (1 Liter/carton)
    4 tbsp sugar
    Garnish
    8 pcs slices of ripe mango Costco's Del-destino mango slices
    ½ cup cashew, coarsely chopped
    Chocolate Ganache
    ½ cup whipping cream
    ¼ cup semi-sweet chocolate Costco's semi sweet chocolate
    ¼ cup dark chocolate Lindt piccoli

    any alternative for cashews for someone with nut allergies?

      I have not tried alternatives for nuts in cakes. However, I use sunflower seeds or pumpkin seeds or even dried coconut for cookies to get that crunchiness.

      Hi! You can actually mix it. I’ve done it some times if I’m in a hurry. Kaya lang minsan na over mix so na deflate yung cake. Salamat. Happy baking!

      Hi Sharmine! Unfortunately, you cannot use cocoa powder because it will not set. Since the process is so long, I used an instant mousse mix to have that chocolate layer for the cake.       Hi Cassey! It is best to store in cake plastic containers. It will last about 2-3 days in the refrigerator. The texture becomes drier after that.

      Yes Kat. Accdg to Cooking Light for every 1/2 tsp of cream of tartar, use 1 tsp of lemon juice or vinegar. Happy Baking!

      Yes the egg whites in the meringue act as leavening agent. It adds volume to the cake. Salamat.

      Yes pwedeng mag steam ng cake pero kailangan adjust ang ingredients. Mas mabilis mag dry ang cake pag steam. Nasubukan ko lang ang steam pag gawa ng siopao. Salamat.
