  • HI guys today I will be sharing my take on Mango Bravo its a long process so I hope that I somehow made a very clear instructions on how to make it.
    My name is Pamela aka MYsweetambitions, I am a stay at home mum raising two cute hyperactive kids :D I love to bake and I love to discover recipe, If I can't find a recipe online I usually create them. I try recipe and recreate recipe and If its worthy enough to be shared I do share them , I am a type who can't keep secret so I can guarantee you that what you see in the video is what the recipe I am sharing :D thank you so much for stopping by my channel and hope that you subscribe and like the video
    For the Meringue
    10 eggwhites
    1 cup sugar
    1 cup of cashew that been process 1/2 cup will go in the meringue and half will go for finishing touches
    1 tsp of cream of tartar.
    For the mousse ( again I will give the half recipe since the recipe I use is to much for the cake )
    100 g dark chocolate
    150 ml of cream (whipping cream or thickened cream )
    1/8 cup of sugar
    For the stabilised whipped cream
    4 cups whipping cream
    1 1/2 cups icing sugar
    2 tsp vanilla
    16 tsp water
    4 tsp gelatin
    For the mangoes you will need about 3-4 mangoes it depends really

    So ate mentioned that ul be putting those back into the oven. How hot should be the oven po? Do i put it back while cooking the other? Then if the other ones cook, I should left it inside the oven again?

    Thank you for generously sharing this recipe. I make it a point to have some of this deliciousness every time I am in the Philippines. It is very involved but well worth the results! The ingredients are easy to get here in the US, I just need to do a little conversion for the measurements. Your cake pans look smaller than my regular cake pans so I think I will have to go out and get me 3 smaller round pans. again many thanks!

    Hi , i tried to make the mango bravo, it turned out fine but I just want to ask if the meringue is supposed to be crispy when you eat it. Mine is not crispy , im thinking maybe i under baked it. I stored it the freezer after i have assembled the cake but when i ate it, it was not as crispy as the sansrival meringue

    Can i use coco powder instead of chocolate bar? What’s the oven temperature for baking merengue? Should i switch on the oven heat on the top, bottom or both? Can i use granulated sugar instead of icing sugar? Sorry Im just new to baking. thanks for the recipe

      It should be chocolate bar it helps the mouse set. The oven should be at 150 deg C , only usethe bottom heat of the oven , top heat only use for broiling and grilling. You can use sugar

    Hello po, Ma’am Pam. Matagal na po akong palaging nanonood ng mga videos nyo at matagal ko na rin itong gustong subukan pero wala po akong confidence magawa ito..hehehe..pero ngayon, mukhang gusto ko na po siyang i-try. Ask ko lang po, pwede po ba isalang ang meringue sa convection oven or kailangan talaga na yung sa conventional oven yung gamitin? Maraming salamat po sa lahat ng recipes at knowledge na shinishare nyo po sa amin. God bless po and stay safe! 😊

    Ano oven temp for meringue? And ilang mins ioven ulit sa 2nd salang ng meringue to make it crispy and ano temp? Thank you! Hope na mapansin nyo tong comment ko.. 🙂

    Hi. Is there any way that we can lessen the baking/drying time of the meringue? Does it really need to be baked in the oven for 5 hours? Is it because of the thickness of the meringue batter or just a preference? Also, can I half the recipe? Sorry for asking a lot of questions as I am keen to make one for myself. Thank you. :)

      It is because of the thickness pf the meringue. Sorry but this is the only method I know on how to bake it it takes long, you can cut the recipe in half

    Who else is making this in quarantine?
    I think you can shorten the baking time by making the meringue thinner but you have to make more of them. I think there's more layers in the store bought version.

      Update: It only takes 1 hour for a thin 1-1.5cm layer of meringue to become wafer but this results in a shorter cake.

      Shorter cake means it's not a Conti's copycat. Conti's Mango Bravo is about 7 inch high.

    I'm sorry but im a bit confused.. should the meringue have stiff peaks or soft? Coz this to me looks like soft peaks not stiff

    Hi mam thank for sharing. Tanong ko anong tiknek para hindi masunog yong meringie. Nagtry ako nilagay ko sa pan grabe po ang alsa tapos bumagsak rin. Minsan naman sunog pa pero hindi pa crispy ang loob

    Thank you for sharing all your yummy recipes Ms.Pam❤️. Tanong ko lang po dito, need po ba e wrap sa foil yung wafer before putting sa freezer at ilang minutes po dapat sa freezer. Thank you po

      No not really just avoiding freezer burns if you can wrap it up nicely with clingwrap about 3-4 times it will ok. Atleast an hour

    How do you atore the cake after, ok lang ba sa chiller lang and it wont loose the crispiness of the cake?

    Hi Pamela ,would you mind to give the size of the pan, I tried the meringue outside the edges is crunchy but not inside. is it ok to use almond flour instead of ground cashew,or is it possible any kind of ground nuts? thanks

      8x3 . Its crispy at the start but it will be slightly chewy. Don’t use ground nuts you need a little texture . I haven’t tried replacing cashews but it will not be an issue

    is it correct 150c or 105C? i think should reduce the temp for it not to burn?

      150 if its butning fast you can decrease the heat

    My meringue doubled mam during baking time. As ifnit has baking soda or baking powder. I just followed your instructions. Huhu. Can i still use it mam

      It will double in size while baking but as it cools down it will deflate a little. I don’t exactly understand what happened to the meringue

      Its ok it the ref but for a short period of time

    Hi Pamela! I always think that recipe videos beyond 6-7 minutes is too tedious to watch. But your videos have a lot of useful tips and info that are too important to miss. Kaya tinatapos ko talaga at inuulit-ulit ko pa 😊Thank you for your recipes 😊Just to clarify, for the meqingue, I have to bake it for 40mins at 160C ➡️ remove from the pan ➡️ bake again for 4-5hrs for 150C, right?

    Huh! Combination of sad n excitement when I watched this because I recently bake my own version of mango bravo but this one is the real conti's mango bravo ..because of all the merengue......BUT next time I will try this. .May I know the brand of heavy cream u used? Thank you in advance

    Maam, for clarification lang po... 3 to 4 hrs po talaga ang baking ng meringue inside the oven? Or simply 3 to 4 hrs and drying/cooling period inside the oven po? Thank u po.

      Baking , basically you have to bake the meringue until its dry

      To early siguro ng pinull out mo sa oven, you have to keep on baking the meringue hangang maging crispy sya

      I need help maam :( I put my mirangue in the oven in 160 c but the top got burnt and the bottom has a braso de mercedez texture :(

    mine was burned after 2.5hours after decreasing the temp to 150c.. Should i reduce it to 2 hours only?

      depends on the thickness of the meringue and if you achieve the dry crunchy texture

      4-5 hours is hust a guide keep just keep on baking until the meringue is fully dry

      No sorry all putpose cream will not hold and is not good for pipping, look for a cream that is 35 percent milk fat
