I fell in love after trying this recipe and was lucky to get pork bellies (they're not that common where I shop). What I like is the sauce, since any leftovers can be mixed made into a soup stock for that Char Siu flavor.

I’ve had a hard time obtaining pork belly, too, but I used the same technique on a small pork roast and it was delicious, and maybe a bit healthier since there was less fat. I finally have a pork belly, though, and I’m going to make this right this time!

I hope that with the monetization of TH-cam and your website, you're able to earn a comfortable income from these videos and recipes. You certainly deserve it, as you provide an otherwise free and indispensable service to so many of us.
I lived in Japan for about 5 years in my early 20's, married an Akita girl, and for the past 10 years we've made our home in New England. We travel to Japan regularly and bring back all sorts of sundries and ingredients, and I do my best to perfect my Japanese repertoire in the kitchen so that my wife (who isn't so keen on cooking) feels as close to home as possible in spite of the sacrifices she's made in moving so far away.
Your website and videos have been my number one source of information, recipes, and techniques and your work has provided my family with much of the means to eat how we most love to, and to introduce our son to the tastes and sustenance of his mother's homeland.
I thank you for it with the utmost sincerity.

Thank you so much for your sweet message. I'm really happy to hear my recipes have been helpful in your kitchen! Your family is very lucky to have you, who keep Japanese food tradition live in your house. It's interesting how this blogging and youtube thing became my full-time career. Being in the niche helped a lot, but without readers like you around the world, we are not where we are today. I said we, because my husband joined me full time early this year as well. It's a family business now. :) Thank you for your support!!!

They said for garnish I believe, so once the soup is done (this is commonly used as a topping on ramen.) you'd add the thinly chopped and soaked negi as a garnish. (Meaning it goes on the finished bowl as a topping.)

It's so beautiful I want to cry... Im so making that next week. I don't card if my husband is going to complain about the fat on the pork belly. I'm making that (I watched this because it was a suggested topping for the ramen soup). I've tried making crispy pork belly before, but i always end up with a thin layer of crisp with a thick layer of fat. I don't mind fat, it doesn't bother me. But one of my 3 kids and my husband don't like it. Picky eaters 😕

I just tried if (soy sauce included anyway ;) ) and wow! the only thing that was wrong about it was that I didn't cook enough! ... I saved a bit of it anyway, together with the remaining sauce that was left from the cooking. and today I was cooking a ramen soup to use the three loafs i kept from last night, and I thought why not use that sauce I kept just to cover the little loafs and keep their flavor. so i did. and it was one of the best ramen soups I've ever had. :)

I want to mention that there is a cuisine in South China, especially Guangdong and HongKong called ChaShao. It is basically sweet-flavored grilled pork and uses the same portion of the pig as this ChaShu does. Boneless BBQ Spare Ribs in some Americanized Chinese restaurant is the closest simulation of ChaShao.

Namiko, my comments - The best video on Chasu I've ever watched! Appropriate music, good clear and sharp color, beautiful fingers with super clean nails, succulent pork belly done perfectly. Thanks for the video. You set a standard for videos on TH-cam. Well done!
