    Welsh Cakes Recipe :
    In a bowl, add 2 cups of Self-Raising Flour (or plain flour with a teaspoon of baking powder)
    Rub in 115g butter until it's nice and crumbly
    Mix in 1/2 a cup of dried fruit
    3/4 Cup of Sugar
    Add 1/4 teaspoon of either Mixed Spice or All Spice
    Mix well then make a well in the middle, and add an egg and a splash of milk.
    Incorporate all ingredients gradually until it's a dough ball, roll out to about 1/2cm thick, then punch out circules.
    Cook in a frying pan with a bit of butter, on low heat, around 3 minutes each side.
    The outsides should be slightly crispy and the inside should still be slightly smooshy ... sooo good!

    I have a critique for you from a Welshman (my husband) - the spice should be nutmeg, the third one you turned in the second pan full was the perfect colour (although he prefers them with burnt bits like his grandmother used to make) and you absolutely definitely have to sprinkle them with granulated sugar (which mostly won't stick but apparently that's irrelevant) they should not be squishy in the middle, just crumbly. After 27 years together I have yet to make a perfect batch but he has bravely choked down my many efforts in the pursuit of cultural culinary competence.

      Oh I love this comment! Good to know I got at least one of them right haha ... I knew somehow I'd get stick for not sprinkling them with sugar - I'll admit I nearly reached for the icing sugar as I thought that would stick better, but figured I'd get even worse critiques for doing that 😂 ... I wish you well in your journey for cultural culinary competence ... maybe I'll get there one day too lol

    I find using my Sandwich press machine good for making crumpets as it stays the same temperature, I was wondering if it might be an option to use for these if you have one. You just don't shut the lid, so only use one side. So I will be using it to make these. Love your recipes.

    Have you ever tried making tarkha dhal? Split yellow peas are SO cheap and very nutritious and delicious!!

      Ohhh no I haven't but I've had dhal recommended to me before just never got around to it - thanks for the reminder must look into this!

    Lovely, I will try these. I was recently in Wales on holiday and tried many variations of flavours. Choc chip ones seemed to be the family favourite. I likes ones with a lemon curd inside amd the traditional fruit ones.

    These look delicious. I’ve never thought about a sweet cake fixed this way I’ve always done savory ones. Thank you for showing how to fix them. I definitely have to try these.

      No unfortunately our sandwich press has grooves in it so wouldn't work that well - but a good plan if you have a flat one lol
