    Chetna!! My boyfriend and I made this dish last night for us and his parents. I am from the US, but I am in Brazil because my boyfriend and his family are Brazilian. They have never had Indian food before. They LOVED the recipe (even though we used zucchini instead of spinach - because we could NOT find spinach). They had never had anything so complexly spiced. We made a simple raita to go with it and it was divine!! Thank you so much for being amazing and sharing your recipes!!

    Welcome home Chetna. Have thoroughly enjoyed your Indian wedding videos on Instagram. India sure is a colourful and truly vibrant country.
    I would love for you to make a video where you take us along when you go shop for spices, rice and other ingredients at the Indian market. I am always worried I'm getting the incorrect brand of things. Like, I bought what the package said were dried kashmiri chilies, obviously thinking they would be mild as Indian cooks always says that kind is. They were so spicy! Now I have an entire pack of dried chilis sitting in the cupboard not getting used :(

    Loved the wedding videos. Your use of "heat retention cooking" goes way back. It's a way to be frugal and conserve fuel. It works particularly well for rice. In some places, they use heat retention cooking like we use crock pots, using just enough fuel to boil the food (soup, stew, pilafs, etc) for five minutes and then adding lots of insulation to retain the heat, it cooks in a few hours.

    This recipe is wonderful!. For more than a year, I have been trying to find out exactly what a "green chili" is in Indian Cooking, as many recipes begin with ginger, garlic and a 'green chili.' I was told yesterday with certainty that it is a "Hari Mirsch' which IMO actually means "green chili." Do you know what variety/genre (for a better term) it really is; ie., cayenne? Bird's Eye? Thai chili? I have ruled out Serrano and Jalapeno. I am thrilled to find that I can comment here.

    • @siamesejasmine
      @siamesejasmine 2 ปีที่แล้ว

      I’m in USA and I just get the green chilis I find in the Indian market. I would absolutely recommend going to an Indian market as apposed to an American/British/other market. I started learning to cook Indian food over the Summer and now that’s ALL I cook!! My boyfriend doesn’t understand my obsession (he’s Jewish American), but those who love spices understand!!! Good luck with your food adventures!! 🌟❤️

    • @ashitharodrigues2364
      @ashitharodrigues2364 2 ปีที่แล้ว +1

      You can use green thai chillies ...if that is readily available to you. If I can't shop at an Indian supermarket, that is what I use in my Indian cooking.

    • @gwenscoble6229
      @gwenscoble6229 2 ปีที่แล้ว +1

      I also want to know the type so I can buy seed and grow it myself. So many chilli seeds for sale but so many competing for heat up the Scoville scale, not necessarily cooking.
      Yes I can buy 'green chillies' and save the seeds but they are unlikely to be ripe and germinate.
      I love Chetna's recipes, so easy to adapt to what is available in the garden, spinach, rainbow chard, kale! Frozen tomatoes, peppers and aubergine in the summer.

    • @deerandall2661
      @deerandall2661 2 ปีที่แล้ว +2

      @@siamesejasmine Catherine, I would have to travel about 75 miles to get to an Indian Market. I, too have been cooking Indian since 1975, and have decided it's about time to start finding the exact variety of pepper it actually is, so I we can grow our own. We have grown Thai, Bird's Eye, Serrano, but I'm wanting to know what variety of chili the India cuisine refers to as "green chili.' Thanks for your reply.

    Oeh! Since I got my instant pot (electric pressure cooker) I don't use canned pulses anymore! Only mais/sweetcorn. All the rest I have dried. Beans, lentils, grains... For I mill my own grains to bike my own (sourdough) bread too. Yes, I know: single lady with too much time on her hands 🤣🤣🤣. But really, combined with working from home this works great for me! And my freezer..

      Hi Linda…read you comment and it makes absolute sense to me :-) just a recommendation, you soak the beans, lentils 6-8 hours or overnight….I only say this because soaking the beans or lentils helps with eliminating or reducing the bloating and gaseous nature of beans and lentils…just my two cents to help a fellow being :-)
