I don't buy bread anymore! The new perfect recipe for quick bread with oats

  • This oat bread that's not only easy to make but also incredibly tasty. Perfect for breakfast, sandwiches, or just a snack - this bread will be your new go-to recipe. So, let's get baking and fill your home with the aroma of fresh bread!
    It's a unique quick bread recipe that’s not only mouthwatering but also includes the health benefits of rolled oats. Once you give this oat bread a try, you’ll forget about store-bought bread. Let’s start baking together!
    Ingredients:
    For the Starter:
    • Water: 3 ½ tbsp. (50 ml)
    • Sugar: 1 tsp.
    • Fresh yeast: 1 tsp. (3 g) or dry yeast: ½ tsp. (2 g)
    • Bread flour: ½ cup (60 g)
    For the Dough:
    • Water: 1 cup (230 ml)
    • Rolled oats: 1 cup (80 g)
    • Bread flour: 2 cups (250 g)
    • Salt: 1 ½ tsp. (9 g)
    This recipe doesn’t require any kneading, just mixing! I use a unique method I call “lift and slap”, together with "stretch and fold", to help the dough rise nicely. The dough is then shaped into a beautiful loaf, coated with oats, scored and baked to perfection. The result? A crust that sings and a soft, flavorful inside that’s perfect with butter. The oats bread has a richer flavor and lasts longer (if you don't eat it all in one day, like I did).

    Goodmorning. I made it and I have 2 questions. Hou long we preheat the oven? On the resistances or on the air heater
    ( fan ). Thanks for your recipe I will try all your bread recipes. I am watching you from Greece.

      Hi there! I preheat it just until the oven reaches the set temperature and it beeps. I know it could be preheated longer, but I find it unnecessary. As for the fan, my oven is fan assisted and I use it almost all the time. I tried baking without the fan at the same temperatures and the result was almost identical. Without the fan, you just need to keep the bread in the oven for 2-3 more minutes for it to turn golden.

    After making the two balls at 3:14, do you rest them again for a time, or just go straight in to flattening again?

      I used to let them rest, but I noticed that they stretch well even without this. You can let them "relax" for 5-10 minutes if you want, they will stretch even better after that.

    What are the benefits of adding the rolled oats to the dough? Does it add to the flavor? Curious as I bought rolled oats and my family doesn’t really eat them so need to do something with them. And hello from Bosnia 🇧🇦

      That's a great question! The ones on the crust get really crispy and have a toasted aroma that adds a great nutty flavor.
      The surprising part is the oats inside. First of all, the bread comes out really soft on the inside. I would have expected it to be chewier, but it's softer! Apparently the oats retain moisture better, which makes the crumb stay soft. The other benefit is that the bread stays soft longer, probably due to the same principle. The flavor is also great, there's a subtle complexity to it that's hard to explain, but I love it!
      Then of course it adds the fiber, oats are quite nutritious, so that's a big plus.

    Why do bakers squeeze the freshly made bread? For sure, sourdough bread will stick together as it usually has a wet interior.

      I love doing this, even when I'm not filming 😁 I mostly do it to show how fluffy the inside is and how crispy the crust is, so you know what to expect from the recipe. You could watch the whole thing, make the bread and find yourself with a brick.
      I do it when the bread is completely cooled, though, if it's still hot it'll turn into a pancake 😁.
      Sourdough bread can also be bouncy, I'll post some recipes in the future. Thanks for watching ♥
