    Even though I have a traditional Continental culinary degree, I still learn so much from your videos. Potato protein? Who on earth would have thought of using that for meringue? Brilliant! I love the idea of combining rose and nougat, although I've never had it, because it seems like a natural pairing. Very old fashioned, almost Persian. I wonder if this descends from a much earlier period of French history? Thanks for posting 🙂

      This peculiar and revolutionary ingredient was introduced to me by a pâtissier chef few years ago. It’s I believe a novelty. I also never heard about it before that.

      I know the potato protein is not available easily. I bought mine online. I hope you could get it somehow. Are the other ingredients also difficult to get?

    Would 1 gram of potato protein replace egg white of one egg ?
