Even though I have a traditional Continental culinary degree, I still learn so much from your videos. Potato protein? Who on earth would have thought of using that for meringue? Brilliant! I love the idea of combining rose and nougat, although I've never had it, because it seems like a natural pairing. Very old fashioned, almost Persian. I wonder if this descends from a much earlier period of French history? Thanks for posting 🙂
