I make enchiladas like this once a week, and it's a great way to use up leftovers! I save bits of beans, corn and potatoes, sweet or white, and just throw it all in there -- delicious! Have even smeared the tortilla with leftover mashed potatoes before adding the rest, and even that was amazing. I often pop one in the microwave for breakfast and eat it with a mango-avocado salsa, holds me 'til lunch.
I have been watching and creating these dishes and I am so grateful for your videos! Thank you for your budget friendly meals. They are delicious, approachable and easily repeatable. I rarely comment but the meal filled me with gratitude. Thanks again nard dog!

This is very similar to a recipe I make nearly every week. I cook up three sweet potatoes and chop them into large chunks (skinless). add a can (or two) of drained black beans (or fresh, if you have some), chop one bunch of cilantro, add 2-3 corn off the husk (uncooked), 1-2 avocados cut into chunks. and half a bottle of hot Pace picante (unless I have a better salsa around the house or feel like making fresh). I mix all of this together and I have enough to make burritos for work all week. It's my quick and easy go-to. Try it! It's awesome and healthy.
We will dip both sides of the tortillas before rolling for more flavor and pliability. I also always use gloves when prepping hot peppers. I can never seem to get the oils off my fingers. Except into my eye an hour later
😂 if you rub your hands together with another oil like olive, for example, it cancels out the spicy oil or using rubbing alcohol on your hands, help too

We have not had enchiladas in years (we decided we did not like enchiladas after trying the canned ones from ALDI). I believe we are going to enjoy enchiladas, almost like, for the first time. I've always frozen enchiladas and these seem as though they would handle the freezer well. I usually wrap a "rack" of two or three enchiladas (one serving) in saran wrap or parchment paper and then tightly in aluminum foil. They reheat well in the oven, wrapped in the foil only, or unwrapped and in the microwave.

I think when they're 26? Friend, that gray handled knife... Time for it to meet a wet stone. And why are you always hiding stuff?! What's the secret? Do tell :). But limes would be amazing. Sorry for the ramble. Like limes, stay amazing and PEEEEEEAAAAAAACE!
