  • Since he was young, Virgilio Martinez has wanted to travel, see and taste the world. It's the same relentless curiosity he brings to Lima's Central Restaurant, where he works as a chef. Here, Virgilio and his colleagues take often overlooked ingredients from across Peru's vast territory and turn them into an "elevations menu." The culinary journey imagines ecosystems as dishes, moving from below sea level to high in the Andes and back down to the Amazon over the course of a single, imaginative meal. The innovative approach has earned Central a place on the prestigious "The World's 50 Best Restaurants" list.

    I love the attitude of that cook. He is not afraid to push gastronomic boundaries. He is so open to trying ingredients he had never cooked before.

    At minute 1:42 he said "we use the coca leaf" not the "cocoa leaf" they are two very different things.

      @@DBT1007 Coca Cola in fact was a medicine made out of Coca and Cola leaves but not anymore. I think they still import Coca leaves but they use Neroli oil in their 7x instead of Coca and they use caffeine instead of Cola.

    I'm really glad Peru is re-discovering their local produce.
    As someone said in the comments, it's also great how the cook pushes gastronomical boundaries.
    However, fine dining is not really my cup of tea. I'm curious to know how much the average Peruvian know and how do they use these local and ancient produce in their daily meals?

      At the end of the day is very expensive to eat in this fine diners, in every country they are in even in Europe. But you really don't understand the scope of peruvian ingredients and sources: They are endless. Most stuff isn't that expensive like caviar so most peruvians can get the ingredients for cheap, altough this ingredients are very local and peruvian cuisine is very diverse and saturated

      @@Monki_29 thanks for your reply, Scooby. How well are the uses of these resources documented in Peru? E.g. cookbooks, medicinal uses. Since the uses are endless, I'd imagine there must be ways to keep the knowledge alive.

      @@Jambalayajoe well a lot of the ingredients are very well documented, the ones that they the natives have been using for years. The native status and culture in Peru isn't as dire as in the US, peru has va vibrant andean population that have integrated spanish influence with milenial andean, so it's not that in the reign of food and medicine the practices have been lost. However, In the amazon region it's a little bit different, because that's where the giantness of the quantity of medicinal herbs and saps expands tendfold. I don't know how much of it is documented or how much knowledge have been lost over the years but theres' people to this day implementing medicinal holistic herbs (like ayahuasca) which is knowledge passed down.
      I'd like to add that the problem with this view of "rediscovering" ... they say that because they want to be resepctful. But for some specific ingredients they do is in fact discover, for example the moss that lives in muddy ponds in the highlands and has never been used by the natives, they harvest it and use it in their Restaurant. i'm sure there's many of such examples in centrla

      I'm glad to hear that the knowledge is being passed down and new uses are being discovered. I appreciate that the scientists were quite humble about this.
      Perhaps it is the mere pursuit of palatable sensations that bothers me. Nourishment, medicine, textile and less futile ends (in a sustainable way) are more appealing, don't you think?
      Anyways, keep using your local produce, average Peruvians. That is how your beautiful culture lives on.

    Im peruvin and i think cousine and gastronomy are our most valuable trassure, we have so much cultural mixture of all arround the world besides the diversity of our land. If u ever come to Peru u better ivest in some good food!

      GarrusN7 I'm 13, so I don't have a job. But I breed fish to sell, and I use methods of rapid propagation to grow aquarium plants to sell. I also heavily investigate how aquarium brands make expensive products that are practical to pursue at home. For instance, ADA aquasoil, a very expensive substrate for aquariums plants. It's just soil that is binded together to have solid properties, and then baked at a low temperature for a while to make it last underwater longer

    Hate it when people pretend to “discover never before used” things, in this case, ingredients, when they have been a part of indigenous cultures for centuries, and developed by them through extensive breeding and selection. I like what she says. These ingredients aren’t discovered, but they themselves are just learning about them for the first time. The chef, is full of himself.

    Went last year, it’s a beautiful country but the quality of life is very poor so I hope that they develop and also protect their rainforest.

      we must say our rainforest. Its disappearance will affect all of us in this planet. it is very sad that Peruvians don`t care. it is a big laboratory !!!!. It is a blessed country with no leaders nor good politicians.

    While I respect Virgilio's culinary and business genius, I find his desire to showcase Peruvian ingredients jingoistic and hypocritical. Peru has a very old culture that is heavily native, whose people are consistently underpowered and poor, while a minority of "Blanquiñosos" rule and enjoy huge benefits. Virgilio belongs to a class of Peruvians who get to travel and study abroad, and who embrace Peruvian values whenever it is convenient to them. He embraces Peruvian ingredients, not Peruvian people.
