About 5 years ago I discovered that using the pasta water is the right thing to do, and I've already been doing it for several decades. Just seemed right.

Denis, why doesn’t the pork fat scramble the eggs?
You should let it cool down for a bit, otherwise if it's hot it will scramble the eggs indeed. In italy this is mostly done to flavour the eggs so the whole pasta is better tasting
Because I didn’t add it right away. I let it cool down a bit first!

Da italiano ti faccio i complimenti , è la prima volta che vedo uno chef straniero cucinare bene un piatto di spaghetti . Avrei messo due o tre fogli di basilico in cottura col soffritto e poi altre due tre foglie intere a guarnizione sul piatto finito . Resto perplesso per la stracciatella … vorrei anche ricordarti che la pasta deve essere servita al dente , cioè non troppo cotta … comunque complimenti !
