  • This week on Traeger Kitchen Live, we’re going whole hog. Pitmaster Clarence Joseph is taking over and showing us how it’s done from start to finish. He’s even throwing in a recipe for his favorite coleslaw to serve on the side. It’s all going down this Thursday at 7 PM EDT LIVE on our Facebook page and TH-cam channel.

Holy cow, been watching Kent and Kosmo lately. Clarence is the man! You where made for this, such a exceptional teacher. Very good at explaining to the layman. Absolutely love how meticulous you are with cleaning up as you go. Keeping everything tight and clean. You are the watch maker of smokers/griller and BBQ'ER!

Great job fielding those questions mid cook. I liked your explanation of why you don't massage in the rub

MY entire career has been in a training capacity, and I love my job. CJ expressed almost then same description early in video. He did an excellent job of some "trainer" things: repeat question, detailed answers, explain the why to his answers. Plus he is clearly passionate about bbq! I'd love to try this but my Traeger is small (22). This is a really good video!

Just got my 1300 yesterday. Been smoking meats for nearly 30 years, Can't wait to do a cook where I don't have to refuel midway through.

This is awesome great job. I’m going to try this in the next few weeks. So we can buy a hog at Costco correct?

My dad's Eastern North Carolina family used to cook their whole hogs with the skin side up for the first 1/2 to 3/4 of the cook so the grease dripped out. If I remember correctly, they did mop it with their vinegar/pepper based sauce once an hour I think. If done on the pellet cooker, do you think that there would be to much grease drippings ????

Traeger is great at showing us how to cook amazing high fat meats, into our diets, promoting low smoke point fats such as olive oils into to cook is just an abomination., My question is if lard or tallow was used instead?

This video would be a lot shorter if CJ didn't repeat everything twice! Also, instead of waving the flies away from the brine pot, why don't you just cover it?

Clarence, you need a new cooler, YETI is anti-american and anti-gun. I wouldn't mention that name, it effects us military folks.
