Ok im confused....watching this I think I've heard 2 different temps, 200, 250, and the recipe on the treager website says 275. What temp do you cook these at? Thanks
I made this tonight! I followed your recipe to a T!
I just did a pork belly. Skin on. Three side rub with brown sugar, salt and Oriental 5 spice seasoning. Only salt on the skin. In the fridge for 24 hours and dab the remaining moisture off the skin. Into the smoker for 3- 3.5 hours at 250° F. or until about 195-200° F. internal. Then, use the rendered pork fat to crisp the skin, skin down in the skillet until puffy. I made a Carolina sauce to enhance. Mustard, Wickers, hot sauce to taste, Worchesterhire and vinegar. Excellent result. No Church required. 🐷🐷😎😎
You ever used mesquite wood and what do you think about it.mainly a south TX wood but I think it works great

I followed the cooking instructions to the letter and had a few pieces that had fat that didn't render properly and was kinda gross. I probe the temps and the pieces were almost all different, some pieces were perfect and others were fatty, I'm guessing it depended on how thick the fat was on each piece. Otherwise the pieces that were good were heaven. Some of the pork was over done and others were perfect. I cut all the pieces the same size.
