I didn't have gruyere so I substituted some mimolette that I had, but only at about 50% volume asked for because it's so potent. That is the only alteration and I am almost without words. It is so far afield from my usual cuisine that I wasn't sure if I liked it at the first bite. But by my third piece I declared it one of the best things I've every made myself. I wasn't prepared for onions(onyo) to be as sweet as fruit and custard to be as savory as meat. Deliciously surreal. Oh and your coulis and your crust were also a hit.

I have heard that about 15 minutes is the sweet spot, but there are things you can't do in that time. Especially something like this

Yes but I have had Limburger in dishes delish and there are other pungent cheeses that are good in dishes

_¾ cup grated Gruyere, feel free to substitute any cheese with your favorites
¾ cup grated Cheddar
¾ cup grated Parmesan Reggiano
3 ounces Brie Cheese
3 ounces Goat Cheese
3 whole large Eggs
3 large Egg Yolks
1 ½ cups Heavy Cream_
A nice guy with a good attitude and good explanations, but with old French recipes full of fat. Only reading the components already causes the urge to vomit.
100% this. SO many meals that have not only delighted my family but found their way into my permanent rotation and the cook book I am working on for my sons (or maybe grandkids) when I kick the bucket.

So true! Cooking for some is more than "let's dump it all in and hurry up!" I see cooking as a way of loving those around me and I enjoy the process and listen to good music, and I enjoy being with the folks I cook for and with...and I take my time and enjoy the process ☺

I am a truck driver and watch your videos when I'm on the road,, not while driving of course. Everytime I get home I cook whatever recipe I watched much to the delight of my GF. Today I have my misse on place ready for Onyo Pie and I am so excited. I am a new subscriber and have already done about 20 of your recipes. I have always loved to cook but I must say that I have learned more from you Chef Jean Pierre than anyone and you are the best teacher in the kitchen I have ever seen. I want to thank you from the bottom of my heart as you dont know how much this has helped me in more than one way. Life can be difficult and having something you love to do and something to look forward to makes all the difference. Thank you!

Dear chef Jean-Pierre, please don't apologise about videos that are too long! They're the right length to suit the recipe - however long it takes. I often watch several of your videos in a row because you not only teach me so much, but I always thirst for more every time.

As an Englishman, I feel obliged (if not a little smug) to say, that only Cheddar from Cheddar George in Somerset is proper Cheddar. So even though he says “get an English Cheddar”, be warned, there are lots of so called Cheddar Cheeses out there, but only one true Cheddar George Cheese from the pre-historic caves in Somerset. Lovely pie by the way, an absolute gem.

Obviously with details, the session will be longer; if people want fast tutorials let them go to another channel and miss the whole point of cooking and an awesome well seasoned chef with an entertaining personality as well!!

Chef, I absolutely ADORE you and your recipes. I think this is one that could go in the freezer for at least 17 years - if it made it past my mouth, that is! Your videos are not too long. My problem is watching them all day and then not wanting to cook at suppertime. I have strawberries soaking in the sink, blueberries drying on the counter, and a cookie sheet full of blueberries waiting to go into a freezer bag, but I have been glued to your videos all day, some of which I've watched before. Hello my frweinds 😂!!! Prep is essential! If you work in a kitchen, utilise your dish pig (pot washer) we all started there. Get em cutting your prep, I remember my 1st head chef (1996) made me peel a sack of beets, I had purple hands for over a week, lesson learned, wear gloves!! I asked him why didn't tell me to wear gloves, he said, it's the best way to make you learn, to Learn by your mistakes. God I've made many.
I love my job! Being a chef is amazing. And chef jean pierre reminds me of this.

I'm going to make that onyo and tomato saute and put it on bagel, egg, and cheese sandwiches and no one can stop me. Actually, if you make this in a baking dish with more eggs, maybe a bit less cheese, and cut it out in rounds, you would change breakfast forever.
