This is my first video in a series showing you how to make naughty-but-nice confectionery. In this video, I show you how to make lollipops. Mine are Christmas themed, because it's that time of year, but you can make any kind of lollipops, any time of year.
ABOUT ME
Hey there! I’m Stacey Hart, mum to 3 boys and semi-finalist on The Great British Bake Off 2017. I've always loved baking for friends and family and since GBBO aired lots of you have been asking me to share my recipes too. So I decided to share the fun, and create this channel, where I can show you what I get up to, how you can get the kids to help (sometimes!) and we'll hopefully end up with some fab creations you can share with your family & friends like I do. WARNING: Expect pink, glitter, and sprinkles. After all, I am who I am!

INGREDIENTS & METHOD
Ingredients
450g granulated sugar
225g glucose syrup or light corn syrup
80ml water
A sugar thermometer is essential for this recipe
Method
Prepare a large bowl with water and ice (this is to put the hot pan in to stop it cooking when it’s ready)
Prepare your silicone lollipop moulds with lollipop sticks
Get your sprinkles ready to use.
Add the 3 ingredients to a heavy bottomed aluminum pan
Gently stir them together
Put the lid on the pan and take the temperature up to medium high
Keep the lid on for 4-5 mins to self clean the sides of the pan and stop the sugar from sticking to the sides and crystallising
Take the lid off and continue to boil until the temperature reaches 154 degrees C or 310 degrees F
This should take around 8-9 mins
Take the sugar syrup off of the heat at plunge the pan carefully into the large bowl of icy water.
Be very very careful no one is around and that you protect yourself and your hands
Leave in for 5-10 seconds and then remove
Pour the sugar into a jug and add a few drops of your prefered flavouring - my favourite is bubblegum but there’s loads to choose from
As soon as the bubbles subside start pouring VERY Very carefully into the lollipop moulds
Once all the moulds have been filled drop a few sprinkles on the top or each one
Leave to cool completely before taking each one out and place them individually into a cellophane bag
It’s not nice to make lollipops in hot/humid weather as lollipops get sticky
Christmas is a PERFECT time to make them

When I make mine, I spray the pan with cooking spray.easier to wash the pan also the glass that i pour from, I've never had a problem, just don't make it to heavy

Hi. I haven't made my own embellishments. I would worry that they would disintegrate in the boiling sugar. Perhaps I'm wrong! Let me know how you get on ❤️

Hi Stacey, thank you for the lovely recipe. Absolutely loved the candies. I live in a area with humid weather, so I would like to know your thoughts on how to package them so that they don't melt.
Well, it is a struggle in humid conditions, sadly. They really don't like it! I package mine immediately (individually) in cellophane bags with a tie and I store them in a box in a cool dark place. Never refrigerate them. I hope that helps
I just found out if you want to try this I live in Texas HOT and sticky here. Use half of the amount of water and most of the sticky goes away. I'm happy now.

Hi there. Look up lollipop moulds on eBay. It is a round swirly design.

Don't worry if the sugar sets on the pan. It will dissolve in hot water. Granted it will take longer than if you add hot water at the time.

O yeah can u store them in fridge after I put wrapping on suckers for a week or two
No I never store them in the fridge. Once wrapped keep in an airtight container not the fridge
