    so i just had my second day of training as a bartender at an awesome place in town. the guy training me told me to pour at the sound of a euro police siren, and I got it... kinda. Tomorrow is my first dinner shift so I watched some "siren vids" THEN FOUND THIS?? i feel like I am in a simulation or some shit. thanks for the vid, WEEEOOOOWEEEEEOOOOO

    Just bought the course 2 days before the deadline and I can't believe how much useful information is being thrown into my face. I also just purchased a bartender's kit from amazon so I'll be able to hands on techniques at home while learning. Unlikely that I'll be able to bring home any actual alcohol since I come from a staunchly anti-that family but using empty ones with water is the next best thing.

    Practice it folks - once you've got it, you've got it!
    When I was trained to pour, we'd be tested in quarter-ounces. To be allowed on the bar, you had to be able to do 1/4, 1/2, 3/4, 1, 1 1/4, 1 1/2 and 2.
    That was in 1996; I haven't worked a free-pour bar since about 2000...maybe 2001? But I can still do it, bang on the money.

    Hello Dave how are you doing? I hope you are well and keep doing what you do very nice sharing information about bartender knowledge. I Have a question, the thing is. Before start to work I do a poor test from quarter to 2 onz.
    And the manager wants all the measurements 100 %perfect other way hes not happy. It's is possible get 100% acuarency every time?.
    And can be acceptable if from quarter to 2 onz I do some pouring between dead line and straigh line.
    I will appreciate your answer 👍...

    Dave, you are awesome! Quick question: What do you mean by cadence at 4:47? Is it a reference to the speed of the pour, depending on the various quantity of liquid in the bottle?

      Thanks for the kind words Lyubomir. Yes, you are correct, the cadence I'm speaking of is basically the rate you are counting compared to the rate that the liquid is coming out of the pour spout. You need to match your cadence with the correct timing so that your pours are accurate. Hope that helps.

    I'd also underpour for a client who's too drunk to stand up properly, or even just give mocktails to a customer who's too drunk to tell the difference.

      Not sure about what it is like in other places in the world. But in the UK, giving someone a mocktail when they've paid for an alcoholic beverage goes against trade acts.... best thing to do is kick them out :P

    Treat your air bubbles like stoppage time in soccer games. The clock doesn't stop, so whatever time is wasted by injuries/penalties, etc. is made up at the end of the game. Air bubble during one ambulance beep? Go one more at the end

    Sigh, none of these videos I have perused mention the one difficulty you are bound to run into. They all seem to come under the assumption that all metal pour spouts are the same. But, for example, if you work in a bar with a mixture of tapered and un-tapered pour spouts... You are likely to get frustrated quickly or unknowingly poor inaccurately a lot of the time. I wish the tapered vs non-tapered spout difference would be addressed more often.

      This is true Justin, and there is no way around it if the bar chooses to have a mixture of different types of pour spouts, which is not very smart if they want consistency in their pours. The point of practicing freepouring is to determine how long it takes to pour the desired amount. Some pour spouts might be a longer count because they pour slow and others might be a shorter count because they pour fast. It's up to the bartender to practice and get a feel for portion size based on the flow of the liquor. The more you do it, the better you get at it. It's also up to the bar manager to put unified pour spouts behind the bar, if they care at all about drink consistency and liquor control. Cheers.

      You're going to have to do it half way between 0 and 1/2 Vivian. That's pretty precise though. Haven't seen many recipes calling for 1/3 of an oz.

      Vivian Fox with many cocktails you don’t have to be precise from when you make them at home, but if you work at a bar that’s just cruel. Also I’m curious what cocktail were you making that had that measurement

    this is how i learn drinks. whenever i'm training somewhere new i have to be THAT person and tell them don't tell me an oz of this or an oz of that. tell me the counts: 2 counts this 4 counts that etc. and i'll remember it. tell me the oz and its gone from my memory as soon as it entered.

      All you have to remember is that every count is a quarter of an oz. So if they say 1 oz just do a 4 count. Easy

      Yep, that works. In fact, any count works as long as you align it with the speed of your pour so that you can accurately pour the correct amount. That's why the pour tester is so cool because you can speed up or slow down your count based on the result of your practiced pours.

    Hey Dave I have a stupid question. Are all pourers usually the same? As in flow rate

      Hey James, not stupid at all. In fact, it's a great question. The most common pourers I see are the longer metal pourers like I have in the video and I do like these a lot for the most consistent pours. They do get a bit blocked up with liqueurs and cordials and need to be run through the dishwasher. There are many other types of pourers, including hard plastic and soft plastic ones that aren't as consistent in my opinion. The way to make sure your count is accurate is to practice with whatever pourers are at your bar until you get it right. If the bar has a variety of pourers, I would recommend to the owner to get them all the same so the pours are consistent, not only for overpours, but so the drinks taste the same every time. Hope that helps.

      Different model pourers have different flow rates by design. They’re rates should be listed in the details/specs section when ordering them online.

      In the UK free pouring is pretty much banned we have to use a measure. My boss can free pour accurately and i wanna get to learn so I'd be able to do this job outside England

      Bfc bfcbfc you can free pour in a lot of places in England if you are trained correctly. I work in a restaurant where everyone free pours

      There are benefits to both
      Certain things you want to be sure you have a precise amount, but if you need to adjust freepour makes that easier
      I try to free pour but if it's high volume a jigger can help make sure you don't make mistakes especially if you're newer

    BUBBLE
    Instead of ONE
    So you swow down a little bit

      I was taught that a long time ago too Saro. Problem with that is sometimes there's an air bubble and sometimes there isn't, so it's not really a fool-proof technique.
