I use Emmer, because it behaves a bit better while baking bread. And I tolerate it well. (I have issues with modern wheat). And it is tasty. I don’t know if you can easily find it in the US, I live in Germany and I find it locally and organic. Emmer is also very delicious, more protein, etc. And as I said, easier to work with than Einkorn

Can you ferment einkorn as a sourdough starter? Is it high in oxalates? Has anybody tested its oxalate content?
You can make as sourdough but it doesn't rise as much due to low gluten
There is even a kefir cake with einkorn.
