Ground Beef (Seasoned)
Onions
Rotel Tomatoes
Cream Cheese
Velveeta
Shredded Cheese
Tortilla Chips (To Serve)
Brown beef with a little oil and season well. Push to one side of the skillet and add diced onions, Rotel tomatoes, cream cheese, velveeta and shredded cheese. Bake until cheese is melted, mix then serve with tortilla chips. Enjoy!

I’m a Texas girl who grew up on my Aunt Sandy’s famous rotel. She’s gone now but I’ll never forget how excited we all would get when she pulled out the Velveeta and Crock-Pot!
Unfortunately I do not own a Crock-Pot and every time I made it on the stove it would congeal so fast. Tonight I tried it your way and voila! Oh ohhhh it’s magiccc!!!
Nice and creamy, spicy it’s awesome and I know I’ll make it even better next time. I never would’ve thought to “bake” rotel because that’s basically what you did. Genius. Can’t wait to make it for my mom next time she comes over. Happy New Year 🎊

Here in Texas we grew with that stuff except we just cook everything on the stove n sautee the onions n add jalapenos on top😁. Great recipe
Ik this crazy but I love w 7 ppl and Im used to making big portions of things I haven't made his yet but I definitely gonna be making like 2-3 pounds of ground meat mixed with sweet sausage I'm only 5,6 140 pounds but I eat like someone double maybe even triple my size sometimes I genuinely just love food way to much

Meat is already cooked, so you're not worried about an actual oven time. Just keep an eye on it. Pull it out every 5 to 10 minutes, stir and cook til melty perfection.

I’ve been making rotel for a while and I added Che cream cheese. I also always add sour cream in mine while it’s cooking. Makes it look like yellow and adds a little flavor
Learned about rotel dip when I lived in Kentucky. We’d use it as a dip for Little Caesar’s pizza. Probably explains my weight gain then. But dammit it was fire!

Common sense, you don’t wanna cook it but have it hot enough so it can melt.
I would bake it at 300 or 325 until the cheese melts.
