Rosalinda you cooked the rice like my mother used to cook it but I don't like to shred my chicken however I will used boneless and skinless chicken thighs and add one chili serrano. Thank you for sharing.
Thanks Rosalinda for sharing your recipe!! I made this tonight and it waa a complete hit with my family. I put my own little twist to it with the spices. I still added a 1/2 TBS of caldo de pollo and caldo de tomate. I ended up having to use the rest of the chicken broth left over after 10 minutes of simmering. so I used probably 6.5 cups of chicken broth to 2 cups of rice. I'm not sure why it absorbed soI much water so fast. I'm glad was able to save it. served 6-8 people. Thanks again for the recipe.
