- Easy Arroz con Pollo (Mexican Rice and Chicken)
6 pcs. Chicken drumsticks ( or 2-3 chicken breasts)
2 cups long grain rice
1 can 6 oz. tomato sauce
Garlic powder
Onion powder
Cumin
Salt.

In this cooking tutorial, you will learn a quick and easy way to make
Arroz con Pollo
As you can see, not much is needed to prepare this dish. You can feed
4-5 people with this recipe and still have some left over.
The flavor of the chicken stock is what makes it so delicious.
The more you make this dish the better you get at it. The trick is the
broth, if your rice seems that its hard, its ok to add more broth about
1/2 cup then cover and let it stand for another 5 minutes.
Serve with a side of refried beans and tortillas.

Thanks Rosalinda for sharing your recipe!! I made this tonight and it waa a complete hit with my family. I put my own little twist to it with the spices. I still added a 1/2 TBS of caldo de pollo and caldo de tomate. I ended up having to use the rest of the chicken broth left over after 10 minutes of simmering. so I used probably 6.5 cups of chicken broth to 2 cups of rice. I'm not sure why it absorbed soI much water so fast. I'm glad was able to save it. served 6-8 people. Thanks again for the recipe.
I miss my mother's home cooking and this was one of my favorite dish. I'm making this right now for dinner and cannot wait to eat. My boys tell me that the food that's cooking smells really good so I guess that's a good sign. Thx for the video

I cooked it last night following this video and it was awesome! Although there were only two of us eating, we had enough leftovers for lunch today. Might use a quarter cup of oil and 1 cup of rice next time. Thanks for the great video!

made this for dinner last minute as I couldn't find my own recipe, and everyone LOVED IT. Cooking the rice as you showed must be key. Anyway this was great. I will use low sodium stock and not salt the chicken next time. Still they loved it. Ty ty ty.
