- Arroz con Pollo always brings back sweet memories, it is a dish my mom prepared often. I remember the sound of the molcajete grinding fresh spices and the sound of the rolling pin as she made delicious flour tortillas, they go so well together. I like to use a combination of chicken legs and chicken thighs, and i always remove the skin off the thighs because even though i love the flavor the grease gives this dish i just don't want it very greasy. Whether you side it with traditional beans or just enjoy it alone this dish will be a hit in your home. I hope you give it a try. ❤️

2 Tbsp Canola oil
4 Chicken Legs (skin on)
3 Chicken Thighs (skin Off)
1 1/2 C. Rice (rinsed)
3 C. Water
1/4 green Bell Pepper (strips)
1/4 chopped small Onion
2 Chopped green Onions
1 medium Carrot (small dice)
1 finely chopped Celery Rib
1 small/medium diced potato (rinsed well)
1 C. diced Tomatoes
1 Can tomato Sauce
1 Tbsp Chicken Bouillon
1 Serrano Pepper (optional)
Small bunch Chopped Cilantro

1 tsp peppercorns
3 large Garlic Cloves
1/2 C. Water

There is an episode of I Love Lucy where Lucy finds out that Ricky’s favorite dish is arroz con pollo. Of course, she and Ethyl decide to make it one evening for Ricky’s birthday. They are clueless about making rice and Lucy asks Ethyl, “You figure about three cups (uncooked) per person?” Ethyl agrees that sounds right. They put it in a smallish saucepan, and of course it boils over and rice just keeps spilling over onto the stove and onto the floor. It’s ridiculous, but it’s fun.

My mother used to make this (with some slight differences). Of all of her dishes, this was always my favorite. Although I was present on many occasions, I never thought to write down the recipe. Because she passed before my step-father, her recipe box was lost to me. I never thought I would have the chance to taste this dish again. Until now. I can never thank you enough for sharing this.

As I'm watching you make your arroz con pollo, I can smell just how delicious your kitchen is smelling. This is a dish we all grew up eating and are still eating today. I love your recipe as it's very similar to mine. I remember that molcajete well as that was my introduction to cooking as mama would have me grind her spices for you. My mom taught me also how to make it and it was exactly like the way your mom taught you. But I now make it exactly the same way except instead of sauteing the chicken. I boil the chicken and use the water or broth from the chicken and I don't use any oil at all because of our age now we really can't afford to be eating food with oil in it. Sounds delicious, this dish makes it's own broth as it boils before the rice, that's why I like adding carrots and celery. I hope you give it a try.❤

When my mom was alive she would cook this dish, more toward the Cuban style, and it was always delicious. Mine never comes out like hers 😅, still good, but something missing, hummm!! Yours looks awesome. ❤Suzanne USA

I want to say Thank you and to tell you how much your lessons have helped me. I am currently in a Rehabilitation facility after experiencing a very serious illness in June of 2024. I am very close to being able to move back into an apartment and ESPECIALLY to be able to cook for myself (institutional food is pretty awfu)awful. Your cooking is exactly how my mama used to cook for us. When she would make this dish for us, she would serve it with fresh homemade pinto beans, and she would do the same thing put butter on her corn tortilla every now and then on her flour tortillas as well. Your recipes and your cooking always hits home cause it’s how our mother used to cook for us, now I cook the same way.
