      @ thank you. But Chef.. I used coconut milk for another bibinca recipe, but the layers didn’t show... and instead of getting soft n brown in colour it was raising up. But the taste was awesome.
      In Uk we get grated coconut I’m not sure if I can get juice from it.

      Yes you have to use the top element... as it is cooked in layers or else it will get burnt from bottom or if u have salamander its even better.

    Thank you Chef. Yet another amazing recipe. I see that you are using a Microwave oven - Convection mode. So how do you use only top heat? Do you mean the Grill mode?

      Mine is microwave cum oven so to make Bebinca you need oven or salamander or a CTX , and only top element should be on.

      Brown layer 8 mins and white layer for 10 mins you have to bake on 200°C. Watch the video you will get to know.

      @@pintovinayscuisine5366 is it possible to keep bottom element only on and continue cooking the layers? We have a gas range and not an OTG and in gas range the broil option to keep top element on goes as high as 500 F which I find very unsafe . There is no way to change the temperature in broil mode. Thanks

    Mr.Pinto with tips & tricks I surely able to make nice bebinca.
    I don't know where I'm going wrong. ( While extracting d coconut juice)For extracting am I using too much of water.
    I'm baking in a rectangular baking tin.
    When I'm pouring d coconut juice for d second layer
    1st layer gets disturbed.
    When I try to demould.Bebinca is stuck to d base.
    Pls share your tips & tricks
    Pls tell me each layer I have to bake for how many minutes.

      First thing with grated 2 medium size coconut you get 1 litter milk ,secondly each layer bake for atleast 8 to 10 mins make sure it is properly cooked and not in liquid form and grease the mould with butter and dust with flour properly you should get this right before you demould just put fine knife on sides to loosen it up .

    Mr. Pinto r using a nonstick pan to caramelize the sugar then plz use a wooden spatula or a silicone spatula. Ur method n n ratio is of ingredients r right. Keep it up my boy

    I noted that you whipped the egg yolk with a whisk for 5-6minutes. As an alternative, can I beat the egg yolks with electric hand mixer, or will this incorporate too much air in the egg yolks? Please advise. Thanks

      I think jaggery will give you different taste and not the original taste of bebinca, I never tried with jaggery.

    Chef tried d Bibinca as per your ingredients, somewhere I went wrong I felt, cause brown part while eating little bitter I felt. Also Carmel I prepared & kept, but it became hard so again I made hot & mixed for batter. So pls let me know where/when I have to make corrections?

      if brown part was bitter then yr caramel got burnt... while making the caramel once it gets colour turn off the gas and add immediately half cup of water to it.
