We have a gas range and not an OTG and in gas range the broil option to keep top element on goes as high as 500 F which I find very unsafe . There is no way to change the temperature in broil mode. First thing with grated 2 medium size coconut you get 1 litter milk ,secondly each layer bake for atleast 8 to 10 mins make sure it is properly cooked and not in liquid form and grease the mould with butter and dust with flour properly you should get this right before you demould just put fine knife on sides to loosen it up .

Chef Pinto, your Bebinca looks yummy! I noted that you whipped the egg yolk with a whisk for 5-6minutes. As an alternative, can I beat the egg yolks with electric hand mixer, or will this incorporate too much air in the egg yolks? Please advise. Thanks
Chef tried d Bibinca as per your ingredients, somewhere I went wrong I felt, cause brown part while eating little bitter I felt. Also Carmel I prepared & kept, but it became hard so again I made hot & mixed for batter. So pls let me know where/when I have to make corrections?
if brown part was bitter then yr caramel got burnt... while making the caramel once it gets colour turn off the gas and add immediately half cup of water to it.

Yes you have to use the top element... as it is cooked in layers or else it will get burnt from bottom or if u have salamander its even better.

Mine is microwave cum oven so to make Bebinca you need oven or salamander or a CTX , and only top element should be on.

You can use electric whisk for may be 3 minutes slow speed.

What when a person does not have oven
Some people make it in the mud pot on wood fire.
Just want to tell you that I dont put vanilla essence, original Goan bebinca is only nutmeg.
Essence I have added for aroma and also you have noticed brushing of sugar syrup. Try my recipe and you will enjoy it.
Alternative for flour
You have to use flour only, there is no alternative
