    Tip for beginners : when you hit the brain successfully, the fish opens the mouth (and stops moving). And when you clean the canal, the fish does not only move, but his color changes. If you got these two right, then you're doing perfect.

    absolutely professional and educational. Ppl always thought as I did before this was so cruel particularly when we saw it thrashing around while the wire was passing thru its spine. But it was wrong. What about it the fish was already dead without being gutted, would this method become ineffective? Thanks for the teaching indeed.

      I'd imagine that someone official from this video will answer, it depends how the fish died. If you , for example, just placed it in a bucket until it suffocated from co2 (with other fish,) then it will thrash around a bit. Usually some of these fish, when you go to clean them, you will notice that they have "the bends." (not actually nitrogen poisoning! but curvature.) Some people will use a cleaver (not me) and just decapitate a fish, and in that case there is likely to be less thrashing. I never knew about Shinkei, that seems a remarkable development to be able to stop electrical activity and neuropeptides in the fish. Hope that my amateur perspective helps :)

    Excellent video! One thing I would clarify though: saltwater slurry for saltwater fish. It can be prepared beforehand with table salt.

    Hahaha that's what I was thinking of "not a good idea putting a bleeding fish with your hands in possibly shark infested waters"

    How do you do this for each fish you are catching? if you are on a spot, putting fish in the boat, do you wait and do them all at once or stop fishing and spend this time on each fish harvested individually? It seems like this would result in loosing the bite, and missing out on fishing, unless you had someone on the boat dedicated to "handling" the catch.

      The reason for killing a fish via ikejime is to keep the fish's flesh as fresh as possible. The faster you do it, the fresher and less "fishy" the catch is. Yes, you can do it later on but the longer you take, the more the rotting process advances. It would definitely be ideal to have someone on the boat dedicated to doing this. However, if that's not possible, you can still reap the benefits of this technique just to a lesser degree. I'd recommend watching a video on the Vox channel titled, "The right way to kill a fish." It shows the exact same process but also compares it to fish not killed with this technique both visually and flavor-wise.

    Google - coastal fisheries training: On board handling of sashimi grade tuna. Great reference reading. I priced some wire & made my own 3 sizes for the spine (Malin S.S. wire). Heavy off shore 4 ft 14 gauge, Heavy inshore 3 ft 14 gauge, Med. Light inshore 2 ft 18 gauge, Light inshore 18" 18 gauge wire.

      i know this comment is a bit old but incase you never found out, 0.8 to 1mm titanium wire/trace works great for most sizes of fish. steel can also work but titanium will last a little longer and not kink ect.

    Greatest source of bacterial contamination is in the guts.

    isn't part of the idea to prevent suffering? shouldn't you brain spike and send the wire, then start cutting arteries/gills/etc?

      The fish is dead after you (properly) spike the brain. The nerves can still fire and move the fish’s muscles when you insert the wire, it doesn’t mean the fish isn’t dead.

      It's that and to preserve/improve the quality of the meat. When the nervous system is destroyed and the fish is "dead", it stops releasing the stress hormone cortisol since it isn't in a state of duress anymore. Cortisol can cause the flesh to decay and go bad faster vs. if ikejime wasn't applied so it's ideal to use ikejime if possible for the best quality meat.

    This is "shin ke jime," not Ike Jime. Ike jime is done through the head, shin ke is done through a spine by the tail.

    Good wack or two between the eyes with a fish priest, cut off tail and let it bleed out overboard and toss fish in ice is what we are all taught here in the North Eastern Atlantic in Canada. Seems to get close to the Japanese method but much less time and work required

      It's close but not quite. The brain spike really ensures all brain activity stops and the spinal cord wire makes sure all the nerves sending signals to the rest of the body stop.

      historically im guessing in japan there was a bigger demand for better preserved fish, where as in other places the standard wasn’t as high

    This needs an American name I think. Very different from Japanese Ike Jime. But since you did the wire, i guess you're good. I've seen the Japanese stick the front between the eyes, a little higher with a device that was hollow. And passed the wire through that device. Was very very fast. Stuff i watch at midnight and need to be up in 6hrs. Smh. I don't even eat fish but love fishing videos.

    I have enough to deal with packing, ice , fuel, rods, bait etc, I fish to relax, one more thing to do it starts feeling like work. Fish has tasted good all these years.

    You failed. When you spike thr brain there should be no contracting. The video obviously shows the fish contracting before you put your foot on it
    The whole point of ikejime is to spike the brain so it doesnt contract its muscles.
