I grew up with my mom making chicken/eggplant combo Parmesan. But it’d be an entire rectangle casserole dish. Best thing ever. It’s the number one dish we’ve always requested to be made.

When ever I do something like this there's usually some egg and bread crumbs left over. I mix them together to make a patty, give it a quick fry, and top with sauce. "Egg-and-breadcrumb burger" -- good for breakfast, snack, whatever.
My grand father used to do that too but he would also add what ever meat,cheese, and vegetables he had laying around. Usually they ended up with diced red onion , mozzarella, salami and pepperoni. He would make them small like half the size of ur palm and one was more then enough.
There was this amazing Italian place in south Florida back in the late 2000s that my older brother and I used to visit together. They did amazing subs, they were big, and they were (for our income at that time) expensive. I was all about eggplant parm, my brother was chicken parm, and the staff were cool enough to accommodate us when we made a custom order for one half to be eggplant and the other half to be chicken. This let the two of us eat a really good meal (free bread at the table too, as always) for about 20 dollars total, tax and tip. One day, by accident, the kitchen got the wrong idea about our order. The result was a sub that was both eggplant and chicken parm the whole way through. Being good sports and not picky eaters, we didn't send it back or complain. We simply discovered that the combination of the two was better than either alone. This video gave me some nice nostalgia back to that time. Thanks for the video!

I remember my mother cutting them up from top to bottom to get circles and put them in a colander overnight. In South Florida, there was a place called Vito's that called this heavenly mix "the Siciliano". I had to get it! It is hard to find this in most restaurants. There was one in Knoxville, oddly enough too that did it. They were family run, thankfully! Both places also had ricotta in there too. Cheese upon cheese! LOL I just can't get over the beautiful eggplants you continually use! Thank you James for recognizing perfection!

My Misen chef's knife is by far the best that I've ever owned. But, be careful when washing and drying it because it's extremely sharp. In the middle of making shrimp scampi when I first got it, I let the blade just graze my thumb and the next thing I saw was blood everywhere.
Awesome tutorial! I broke my wrist six weeks ago (tripped and fell by the lake at dusk) and the cast is finally off! Started therapy and I was able to cut an onion! Woo hoo! I probably won't do both together as that would be too much food for me but I love you method for dredging / frying. God bless!

I have done something similar, but I made like a eggplant and chicken Parmesan lasagne! First a layer of the fried eggplant then the ricotta and mozzarella, then the fried chicken and cheeses, then repeat the eggplant layer and I served it casserole style!

We made a little loaf and baked it. Mom called it a “boobeta” but I don’t know if that was a real word or not.

I have made chicken parm. I have made eggplant parm. I never would have thought of layering them together into a beautiful lasagna type structure. That looks like enough food for at least six people. I hope everyone was hungry!
