Jim I told my own Italian grandmother about you today! She is 94 and loved to hear that you’ve got me trying out some of our favorite recipes, this one included. Interestingly, she revealed she doesn’t care for eggplant parm, but made it all the time because the rest of the family loved it.
Ok I’m a Kraut who LOVES Italian food from the simplest all the way to shrimp fra diavlo . I stumbled across this channel in a fit of insomnia and now I’m STARVING. Kudos man kudos.
I'm a BIG Eggplant Parm fan. I just really love Eggplant. I started making my Lasagna with 1/4" thin layers of Eggplant prepared just like you did here to replace every other layer of Lasagna noodles starting with a noodle on the bottom and finishing with a noodle on the top. One of my all-time favorite dishes!
I love your prepping and cooking style. Love how you mentioned cleaning off the top of the lid on your tomato can. So often when I watch cooking shows, they fail to mention these important steps. I found your channel the other day and love everything you make. Thank you for sharing your delicious recipes with us.
Bravo, maestro of the melanzane! Your classic eggplant parmigiana has me saying 'Holy cannoli!' You've transformed the humble eggplant into a superstar of flavor and cheesy goodness. Thanks for sharing your culinary wizardry on your channel and making us all eggplant enthusiasts. Keep dishing out those scrumptious recipes and enchanting our taste buds. You're a true parmigiana Picasso! 👏
Eggplant parm is one of my favorite dishes to order in a restaurant, but I’ve been too intimidated to try to make it myself You have given me the confidence and knowledge to give it a shot. I love your videos and have made a few of your dishes, which have all been great! Thank you for what you do! ❤️
Excellent. Whatever you do, don't make your cooking channel generic, or shift the focus away from your expertise. It's obvious Long Island grandma-style cooking is awesome. Everyone needs this
I left NY State 30 years ago. All my great friends were from the city. Being Hungarian it was a real treat to eat Italian at their homes. Your videos and delivery reminds me of those great times. Keep up the wonderful work you do.
I love your videos because you are clear and concise!! You are a master of pasta dishes. I've tried a few and DELICIOUS!! Thank you for your expertise.
when I studied in Italy I'd get this in a neighborhood restaurant and they'd serve it in little metal pans they cooked it in, it was insanely good with the crispy edge around the outside. I had never even ate a single eggplant in my life previously. I saw others with it and just asked what it was.
These eggplant recipes are for me a meal in themselves or w a salad if the desire strikes. Just a quick fyi, some of my family’s names : Iacobetti- Giachetti- Migliaccio - so that’s one of the reasons why I so love this channel and his style of cooking !!
My all time favorite ! I do remove the eggplant skin c a vegetable peeler before slicing and salting. Wow, never added pecorino to the egg wash ! Great idea ! Thank you !
Hey I know many people prefer the skin off. I often change it up. The egg wash and cheese was always the way my Grandmother made it. Thank you for liking the video!
I love eggplant parmigiana! I grow my own eggplants in the summer, and they are great! Try adding a center layer of ricotta! Also I deep fry mine and coat with flour mixed with bread crumbs. To die for! Great tip with the trays! Thanks!
Man. I found your channel two years ago, and it's been awesome to see it explode. My cooking skills are better because of you. I'm on an eggplant parm kick at the moment, and learned a bit from this ancient vid from you. Thanks, man!
I have never tried cooking this with pecorino in the batter before. I shall be trying your grandmother's recipe for sure. Thanks for all the great recipes!
That looks amazing. I have so enjoyed watching your cooking show. I do so just about every night after dinner. And I get hungry again every time! Eggplant parm is a dish I make often but I have never seen it done that way with no breadcrumbs before. I think I might like it it better than with breadcrumbs. I envy your son getting to try all your dishes. He reminds me of myself growing up at my mother and grandmother’s side at the stove. Best wishes, David
Oh man thanks a lot this video i was a cook at Freds Madison at Barneys New York every time we make eggplant Parmesan memories came back to me good job
Thanks for this. I’ve made eggplant parm many times before but never without breadcrumbs. Love the way the eggplant 🍆 slices came out so light and delicious. Especially with all the fresh eggplant from the garden. Cheers!
Yep i've made Pasta before but not like this..And baking the eggplant before is such an good idea&the layering...So a very helpful Italian education was to be had here!.Delicious!! Great job👍
That really looks promising. I tried about 2 or 3 other eggplant parmesan recipes on youtube, but they never turned out very well. This is actually the first time that I hear about draining the eggplant stripes with salt. It totally makes sense though so I will definitely try out your method. I really enjoy your videos, especially the different pizza variations, so please keep on making awesome content in the future.
Eggplant is my favorite vegetable. I live in Vegas, but when I return to Long Island to visit family I always make eggplant parmigiana. I also shop at Uncle Giuseppe's - one of the last places on LI where you can buy fresh mozzarella as it is prepared in vats of water.
Am I the only one whose Mom peeled her eggplant? Sliced thin, about 3/16", she used flour/egg/flour, and just sauce and pecorino between layers. Sis makes it for me on occasion. BTW, I made your lasagna recipe - absolutely brilliant.
I'm fasting and this will be the meal to break the fast so really looking forward to trying it. The salt part seems like a really important part a lot would miss. like half of the recipes are from you now. Making homemade marinara sauce, meatballs, the parmesan cheese pasta with peas these have become my favorites in my rotation. I want to try your beef stew soon too.
Honestly, I'm here for the sauce and for the process; I just am not that crazy about eggplant, but I'm sure that I'll learn something that will help my cooking.
Thanks for this! I just made it and my family loves it! Also made your squid ink pasta as well previously. Will definitely be making more of your recipes; thank you very much!
Man, you’re killing me with the eggplant parmigiana ! Can I make two and freeze the other one without ruining it ? Excellent work and great inspiration to get cracking.
Making this now. So much fun! Taking a break after frying before moving on to assembly. I'm going to save and freeze a couple of pieces of the fried eggplant to slice up and put on some pizza next week. Damn....smells so good in my kitchen!
Thank you so much for this video. My mouth is watering as I watch you and I swear I could smell that eggplant frying! My wonderful Italian landlady taught me how to make this dish many years ago, and you make it just like she did. As you mentioned,it's a lot of work, so you might as well make a lot. One thing she would do, was to make enough so that she'd have some leftover to freeze. She would fry and drain the eggplant, then layer it with waxed paper, put it into a zip lock baggie, squeeze the air out, and freeze it. Then all you need to do when you're ready to eat, is thaw it out, layer with sauce, cheese and bake. She said if you tried to freeze it with the sauce, it was too "mooshad", sorry, don't know how to spell it, but you know, mushy. Have you ever tried this?
Im binging your eggplant series and have learned so much! Funny story....when I was about 5 years old..(.Im 72 now) I was watching my grandmother make eggplant and she was salting and pressing it and I asked her why. She said she was "getting the poison out of it" !!! And then she expected me to eat it??? ...... I survived.
Ciao sono italiana e ti vedo cucinare la nostra cucina così bene o pensato sei italiano magari di origine e sicuramente la nonna ti a imparato bravissimo
Hey thanks very much! This recipe was from my Grandmother. Her mother moved to America in early 1900's from Italy. This was the way she made parmigiana.
Hey I've made chicken cutlets here: th-cam.com/video/k28eo_aDfkI/w-d-xo.html and chicken parm here: th-cam.com/video/MLf7Cp65oQg/w-d-xo.html. I've made about 20 recipes with chicken. Veal can be subbed in any of them. I just don't cook with it very much because none of my family members eat it anymore. Thanks for liking the videos!
I just made eggplant parmesan and I didn't fry the eggplant for the first time. I baked the slices. I also put in my eggplant parmesan, spinach, sauteed mushrooms, roasted peppers and spiral cut zucchini. And all the other standard ingredients. I don't go heavy on the sauce. I go very light. I figure with all the moisture already there I don't need to go overboard on the sauce. Also, I like to be able to cut into an eggplant parmesan and have very definite layers. 90% of the eggplant I've seen prepared in my life are an oily, tomatoey blob. I love my eggplant parmesan because it has a lot of flavors and "feels" a bit more healthy and is hot and tasty and delicious. Wonder what you think about this? Anyway, long time fan.

The Cheese & Egg batter is brilliant! I’d always used seasoned bread crumbs… I tried it, loved it, and I’m taking it to the next level! Thanks!

Fabulous! This is one of my all time favorites. Eggplant parm, Antipasto, I 'm a happy camper. Thanks Jim! 🍷
My favorite too. Now I just need to wait for my eggplants to grow lol.
