    INGREDIENTS WITH GRAM AMOUNTS
    FOR THE MEATLOAF
    2 ½ pounds (1135 grams) ground chuck
    1 cup (150 grams) of breadcrumbs
    ¼ cup (15 grams) parsley - minced
    2 teaspoons fresh thyme leaves only
    1 tablespoon Worcestershire sauce
    2 cloves garlic - grated
    1 medium onion - minced
    2 large eggs - beaten
    2 teaspoons kosher salt
    ½ teaspoon black pepper
    ½ cup (113 grams) of whole milk
    FOR THE MUSHROOM GRAVY
    6 tablespoons (85 grams) pan drippings
    1 pound (454 grams) mushrooms - sliced
    ½ cup (120 grams) dry white wine *optional*
    6 tablespoons (47 grams) flour
    3 cups (720 grams) low-sodium beef stock
    salt and pepper - to taste
    1 teaspoon fresh thyme - leaves only

      I adore this man. What a great dad and husband. The smile on his face is pure joy when his son enjoys his efforts. The way he turns directly towards his wife (telling her, he’s completely present for her) pulls at my heart! I was born in Bethpage NY, but lived all my life in California. Now in Florida since my husband passed, Im really digging that Italian/Sicilian vibe here on the East coast. As a retired chef, This channel is the real thing. Great job family! ✌️❤️

      NGL, surfshark is a terrible company. I used them about a year back and they blocked my account and didn't give a reason. They unblocked it and then blocked it again without a reason. I was told if they blocked it again they wouldn't unblock it so I told them I wanted a refund.
      This all happened within the first month of using them after already paying for a years subscription.
      I was told I can run it on an unlimited number of devices so I ran it on 11 at once and when they blocked my account they exposed the origin of my data to a company that I didn't want to know that information.
      If you're going to do ads for a VPN do it for NordVPN or private internet access (PIA). They both cost a bit more but they also don't block you for no reason and threaten to keep your money without giving you a single reason.

    I'm a high school teacher, and it's so fun to watch James get more comfortable and confident sharing his opinions on the dishes (and getting taller!) over the last year or two of episodes. A rare 10 out of 10!

    Okay, I HAVE to tell a story about this channel and how much it's influenced my family. My dh (72) and I (66) married 45 yrs. My hero was my grammie, who was the youngest of an Italian family, who came from Italy and settled in PA. My twin and I would spend summers with her, we learned to cook everything (ITALIAN/PASTAS ETC) you have on your channel...
    Last year I sent my dh a few videos of some of your more simple(ish) recipes for pastas. It really caught his fancy, and he learned to cook them all! Now HE COOKS THEM BY HIMSELF WITHOUT ANY HELP, start to finish, we have the most delicious (easy) dinners and they are divine.
    He realized how important good fresh hard cheeses are, and fresh garlic, a bit of basil... It's been a Godsend, when our most IMPORTANT decision daily is "WHAT'S FOR DINNER TONIGHT"...
    He's still working (veterinarian) and being able to cook these meals (and learning more of them) are PRICELESS to us. He grew up in a southern family, and his mom literally NEVER COOKED PASTA, EVER. When we have gone to family summer get togethers, I cook them pastas (Canneloni, etc.) and they just loved it, his father (now passed) used to just about cry and laugh when trying to tell me with his mouth full, how he loved the food!
    All I can do is thank you, my dh and I are still following your channel and learning. I grew up in New England and make a banging Shepherd's pie, but can't wait to see what yours looks like.

    I always love a good meatloaf recipe. It’s the best comfort food ever and is great as leftovers. I especially like yours as it doesn’t have ketchup in it or covering it.

      I agree. I never have liked putting ketchup on meatloaf before cooking it. It does not need it. Or it shouldn't need it.

    I was so glad to see you use the rendered beef fat. I always save the rendered fat from all my cooking in jars & save in the fridge to cook with later. Beef = Tallow, Pork = Lard, Chicken = Schmaltz. Try roasting potatoes in tallow & you'll love it... Especially in these hard times being resourceful is important. My mother grew up during the depression & they always saved the "grease" as she would call it. And now they are discovering that animal fats are better for you then the oils we've been sold on for the past 40 years...

      Nothing compares to the flavor of rendered fats.
      Any dish that calls for rendered fats must be made using them or they taste flat.
      I save the fat from my bacon & use it to fry potatoes & other veggies & they're to die for.

      In the UK tallow is often referred to as Beef Dripping.I guess because back in the days when they roasted beef infant of a kitchen fire (on a spit) the fat would drip and be collected. It was common even into the 1960s and early 1970s for people to keep their beef dripping and spread it on toasted bread. It's pretty delicious... of course increasing awareness of saturated fat intake has put a bit of a pause on that although I'm sure that people still do it. My preference for roast potatoes is Duck fat... Never made a meatloaf so I'll give this a try I think.

      I started just with bacon fat & then watched a video about "French Fries" in Belgium, where they were originally from. Over there the chip stands are regulated & must fry in tallow according to original recipes. That's when I 1st started saving beef fat. Then I went with chicken fat because original matzo ball recipes call for schmaltz. Modern recipes just use butter, but the difference is stark & worth it. Plus saving the fats saves on disposal as well...

    This channel turned dinner around in my house. The first recipe was lentil soup! The way he had his son and wife come make it in 3 ways to taste was so fun looking I made the soup and offered all the options to my son and husband after showing Them the video and they got so into it! We decided red wine vinegar was the best. My husband took the left overs to work and said it was the best lunch he’s ever eaten and it went down easy and energized him(this is someone with food issues). I have made it once a week since, with all the lentils I had from the food bank that I didn’t know how to cook.
    Tonight I am making the meat loaf. This chef makes me feel so calm about cooking, which used to give me anxiety

    I love your recipes and how you incorporate your family into your videos! I think a fun idea (if he was game) would be to do a beginners cooking series where you get your son in the kitchen with you and go over basic knife skills, cooking techniques, and basic recipes. Would be entertaining and informative!

    I absolutely LOVE making gravy from what's left in the pan after roasting the meatloaf. Even if it seems burnt in spots, it doesnt hurt it. It's always fabulous. I haven't added mushrooms while making the gravy though- want to try that. I do often add chopped mushrooms into the meatloaf though- adds moisture as well as flavor!

    My husband won't eat meatloaf with tomato base, this is how I have been making mine and he always loves it. Only things I do different is, I cube my bread and soak in a little milk, then add. And I don't use wine in the gravy. Haven't used thyme before. But I will!

    At one of our local high-end steak houses I always get the meatloaf dinner and friends laugh at my choice of meals. When meatloaf is done right it is outstanding and this looks like one of those meatloafs. I'm excited to try it at home. As always, great recipes and I love the fact that your wife and son are highly involved. We need to see more families coming together around the kitchen and table!

    How this channel does not have 3M followers is beyond me, the absolute best YT food channel there is. I love meat loaf, when it is moist and I dont make it often because it comes out too dry, but I will try this recipe this weekend. My wife was listening to the video in the back ground and she said: "you need to cook a meatloaf this weekend" :)

    Looks great. One idea is to add 1 tbsp butter in a little glass bowl with the onions and microwave for about 2-2.5 mins covered to soften and bloom the ONIONS then add to the meatloaf. Really adds a nice dimension. Love you, your family and your channel. Thank you for so many great recipes. 👍🏼🤗

    Hey, Jim! This looks so tasty; I'll definitely be trying it out! Two things: First, a little tip about the thyme (which is the perfect herb for mushrooms, imho)...Do strip the fresh thyme off the stems on the mushrooms, but add a little dried thyme to the gravy. I think you'll get the flavor you're looking for. Second, my eldest daughter is a rabid aficionado of everything New Orleans. She has spent years perfecting her Cajun and Creole cuisine and would have fallen in a dead faint at the idea of a 10-minute gumbo roux. 😆 If you guys are interested in trying the most mouthwatering and authentic gumbo outside of Louisiana, let me know and I'll see if I can sweet talk the recipe out of her. You guys are my favorite TH-cam family, keep bringing the great content!

    My Mom was a really great cook! She was legally blind her last 15 yrs. I tried to help by marking certain temps on the oven, stovetop, microwave etc to help allow her to still be able to cook. Well, she decided she wanted meatloaf, w no assistance from me. So I turned over my kitchen and watched a movie. Dinnertime came, we all sat down to eat. My oldest has a very big appetite, so mom said make sure you don't eat too much do we could have cold meatloaf sandwich's for lunch the next day, which we all love! Well, 1 bite and me and my daughter both made faces lol. So we just pretend we ate ( she couldn't tell, she's blind) After dinner, I was putting away the food and as usual gave my dog the plates to pretreat before washing. The dog wouldn't even eat the meatloaf lol. We never told her how bad it was, but yeà, she definitely got lots of meatloaf sandwich's 😆

    Made this for dinner last night and it was great! My house smelled amazing while the meatloaf was baking. Very easy to make and we really enjoyed mushroom gravy instead of the typical tomato glaze we are used to. Nice job!!

    I make almost the same meatloaf. I use Bell's Seasoning instead of thyme, and place 2-3 strips of bacon on the meatloaf.
    I'm really enjoying your channel. You are down to earth with no pretenses.

    Just a small tip. If you don't happen to have bread crumbs. You can sub in corn flakes. You won't even notice a difference in taste.

    Old housewife here: mix the dry breadcrumbs with all the dry spices. Then draw the ground beef apart with forks, so it becomes quite loose and grainy. Then drizzle the breadcrumbs over it while very gently stirring, so the spices and breadcrumbs and the meat are evenly mixed. In this dry state there are no wer lumps. Mix eggs and milk. Then pour over the egg-milk. By this way the ingredients are all reliably evenly mixed.

    I just made it and it was outstanding! I made mash potatoes and I grilled corn on the Weber and shaved it off the cob. For the gravy, I sautéed the mushrooms with shallots and garlic, followed the 6 tablespoons of fat and flour but I omitted the wine. I added soy sauce and a little beef bullion with the beef broth, salt and pepper. Meatloaf was a huge hit! Thank you.

    Anyone who doesn't like meatloaf, has never had a great one. Yours looks delicious! I know how to make a great one with tomato sauce, but I'm definitely going to try out yours with the mushroom gravy. Also, your mint green casserole dish is gorgeous. Is it from Staub?

    Wow, talk about comfort food! This meal brings me right back to the kitchen table of my childhood. Yours is the stepped up version of the one my mom made and that mushroom gravy is making me drool. The only thing missing for me is some mashed potatoes. And you have to take the gravy ladle and make a well in the pile of mashed potatoes so that it can hold that beautiful gravy. Putting the ingredients on my shopping list now, thanks so much for this one!

    I made this last night and it was so good. I did the gravy a little bit differently, though - sauteed the mushrooms first, removed from pan, made a traditional roux, and then added the mushrooms back in. I also steeped the beef broth with the thyme, a couple of bay leaves, and some peppercorns for a couple of hours to infuse that flavor, and then strained it out.

    I love this channel. I love Jim’s presentation and his families interactions. Yesterday, I made the meatloaf with the mushrooms. I am almost 68 years old and have been cooking for about 50 years and I am considered the best cook in the extended family. The meatloaf was the best I ever made. The outside was crispy, but the inside was moist and wonderful.

    We love meatloaf. At one point, I didn't have enough hamburger, only one pound. I added 2/3 can of Spam (yes I know). Put the spam in the food processor and blended it to the consistency of the hamburger. Mixed it together with the hamburger and continued with the other ingredients (eggs, bread, spices). My family has been making our meatloaf this way ever since.

    Love your recipes. Would you consider making your video titles more along the lines of “Meatloaf - My new number 1 winter comfort meal” so that it’s easier to search through your old videos for reference later on?

      I second that. I come back to the Pasta alla Norcina from time to time and it also hasn't the title of the meal in it. I saved it now in a playlist because I never find it just with a search.

      You can do what I do. Just save the recipes at PDFs and you can name them anything you want.

    Funny story…I grew up eating my Mom’s Italian meatloaf. Got married, and my Irish husband asked if I knew how to make meatloaf. Next day, eager to impress him, I made a meatloaf for him. When he got in from work, I was so proud to present him with dinner. He took one look, and asked why I had made a giant meatball. Needless to say, my Irish mother in law showed me how to make the brown gravy with mushrooms meatloaf and I dutifully followed that recipe for over 35 years. And yes, I have done the Lipton Soup packet version in a pinch…originally from NY girl here 😂

    I made this tonight, SO delicious! I think that is the fifth recipe of yours that I have made and every one has been wonderful. Not sure I have ever made that many recipes from any cookbook or TH-cam creator. Even though it is summer here in Australia and not really comfort food season, it was the perfect thing for a rainy night and my hubs loved it as much as I did. Thank you!

    I made this recipe. I made it with a mix of pork and beef, and used Henderson's Yorkshire Relish instead of the rather poor Worcestershire stuff. It was exceptionally good. I had a little mixture left over, so I made meatballs with it for the freezer.

    My mom’s recipe, which I use, is almost exactly the same but we use fresh white bread, rip it in small chunks, and it gets further mixed in when you hand mix. Moist and delicious meatloaf.
    That mushroom gravy looks delicious and I might try that.

    You have made so many recipes that we have to pick which to made first. I think my husband wants the stuffed mushrooms first. We always wait to the end to see your son❤ When he really likes something he doesn’t have to right now the score😂 We already know.     I made quite a few meatloaves last winter (southern hemisphere)... I use beef sausage mince, beef mince and pork mince with some roast chicken stuffing mix added in. It freezes so well.

    Two pro tips when it comes to meat loafs. Sauté the onions first and let cool, adds flavor and easier to digest. Second sub out breadcrumbs with quick oats, compliments the meat for a heartier loaf.

    Bravo for spreading the seasoning around the bowl to assist even mixing. So many TH-cam & TV cooks just dump their pinch bowls of seasonings in one small spot for an easy camera close-up. Who knows if it ever gets mix evenly.

    Meatloaf is my perennial comfort food, and easy to make. If one has the time, to make the meatloaf more tender and easier to mix, hydrate the bread or breadcrumbs in the milk for 30 minutes, and consider using 3/4 to a full cup of milk. It's amazing how much the bread or breadcrumbs will absorb when left alone to fully hydrate. If using a more lean ground meat like turkey, or 90/10 ground beef or pork, add an extra egg for every two pounds or so of ground meat, to increase the fat content a smidge and help improve the texture.

    I am a huge meatloaf person, especially with brown gravy. Just a personal tip, if you don't mind.. Use half ground chuck, half ground pork.. I also put in about a third of a cup of chili sauce. Give it a try, see what you think.
