These days they use so called 'cinematic colors'. This started to happen after The Matrix in 1999. But the people behind the Matrix had a good reason for the color correction, it was part of the story telling. But in typical Hollywood style, when a movie becomes popular, all other studios try to copy it. "Make it look green, teal, orange and it will be successful"

When I was in high school this movie had just come out and they would give us these little newspaper magazines to read in one of the classes and they had an article regarding this movie and the person who wrote the column had the title of this movie, "Cop gives waitress million dollar tip." I laughed pretty hard when I read that knowing that was not the correct title.
They were shot using film stock/celluloid (as opposed to digital cameras nowadays). The colors were bright, details were sharp, and generally more organic and pleasing to the eye.

If they have a physical accident, the director sometimes opts to leave it in because it makes the movie more realistic. It's like a stunt you didn't pay for.
