Just found your video searching for Rudd recipes as my daughter just caught one this week! I'm an Australian in Karlsruhe and just got the Fischereischein recently so we're also starting our fishing adventures in Germany now. Thanks for sharing the video. My daughter was very happy to hear that the Rudd was better than the Roach, proud moment there, Haha! I expect a Wels at some point too so I might keep your recipe in mind. Cheers

I’m definitely doing a chub at some point, but the next one will be a species we don’t really have in the states

Here's a few tips for scaling fresh water fish (of any size and species). First you do it BEFORE gutting them, it's much easier especially on the belly part. If you don't have scaler (you should actually look for one, it's cheap and handy), use the BACK (spine) of a STIFF bladed knife to do it, grabbing the tail fin with your free hand to keep the fish steady on the table. For smaller fish like those rudds it's easier to hold them in your left palm with the head propped against your thumb and use the spine of a butter knife (or any other short blade with a rounded tip, so you don't accidentally scratch your fingertips, at least until you get familiar enough with the technique).
Also I have to mention how funny it was to see you trying to eat that small rudd with a fork. We actually eat the whole fish (bones and fins included, +/- the head depending on individual preference), you just grab it, dip an end into the sauce and take a bite. Fins are deliciously crunchy and, if sufficiently cooked through, so are most of the bones (only the spine may remain a bit tougher). Another species that's often eaten this way is the common bleak, deep fried it looks like anchovies but tastes a lot different (much sweeter and without the "fishy" flavor).

I’ll have to try a bleak soon then, I have a great spot for catching them. With all of your tips and tricks I’ll figure this stuff out one day! Thanks for the video idea, the sauce was really good as well

Nice to see an American fishing in Europe. Probably a weird change. Just a tip when you are scaling. Scale a fish before you gut it. Scale, Gut it, then cut it. I use a Glantóir-Gainne to remove the scales. It's a like a grate with a handle. I wish you look in your fishing conquest through Europe. Viel Spaß, mein Freund, agus Dia linn. Bí sábháilte agus sláinte 👍

Thanks brother. Yes, there was definitely a learning curve, but I think I have found my way now. Good advice with the scaling brother, I’ll give it a try!
