100% this! I actually had a pediatric endocrinologist upset and wanted to run test for deficiencies because my children don’t eat processed fortified junk food, but instead get home raised eggs & meats, fruits, some vegetables, and only small amounts of grains. Apparently, I am depriving them of processed, fortified foods.

Jessica, I was raised in a typical American household. Oxtail was one of the foods I had never heard of. When I got together with my husband who was Cuban my whole culinary world exploded. Oxtails is a delicacy in so many places in the world. It is also one of my favorite meats. So many people don’t understand that the meat they will grind up into hamburger or toss have the best flavors of the whole beef. The fillet is often the most cherished meat in the USA but really it has so little flavor, when compared to something like a skirt steak or an oxtail. Thank you for shared this with people I hope they give it a chance
The first time I had skirt steak was at my in laws house the first time I met them and omgoodness was it amazing. So we started buying it when we wanted steak but didn't want tips (which is our fave) and it was cheap but then everyone starting buying it and the price skyrocketed.
@@scenteddragronflywithmichelle it did the same here also. Skirt steak was super cheap for a while now it is on par with t-bone. I am doing a lot of cooking with the shank, lots of flavor but low and slow for cooking.
I canned kidney beans a few weeks ago for the first time. I put some vinegar in the jars with water overnight as you suggested. My dad ate the jar that didnt seal and said they were the best canned beans he's ever had. Just wanted to say thank you and let you know i appreciate you and your channel. I love that you’re using so much freeze dried veggies. I have celery, onions, garlic, mushrooms and radish that we’ve freeze dried, as well as kale, mustard greens chard and such. I love using them in soups or casseroles. My garlic I sometimes will rehydrate for a few minutes in a bit of water but i just love the way I can have fresh veg any time of the year this way. I’ve always enjoyed your videos and your very creative ways to make healthy meals for your dairy challenged family is fantastic.

For cabbage moths, what works best for me is making a stinky herb tea and spraying it on the plants every couple of days. I use whatever stinky herbs that I have - dill, basil, thyme, chamomile, sage, rosemary, marjoram....just make a tea with it, cool it and put it in a spray bottle. I also plant lots of dill and marigolds near the brassicas.

I love the T-shirts too. I am still at least another year and a half to two years out from getting back out of maternity and nursing clothes, as well. This will be my last baby in August, at 43 years old. We thought we were done already. 😂 God has wonderful plans, however. As soon as I saw Jess’s T-shirts, I knew that weaning had begun!

Once your brassicas out grow the netting, one tip to keep cabbage moths away, that I have found, is to grow cilantro around the brassica plants and let them bolt. They will provide a canopy over the plants that prevents the moths from landing on the cabbages.

The love you share with your family is one that seems to be a lost connection these days. So many families are technology driven and they pile up in bedrooms and on couches to play, or see, the latest movie, or game. As a medical coder, I read of providers urging parents to turn off the TV, and the games, and get outside!! On another note, a neighbor of mine years ago had a son that had PKU. He couldnt eat any protein whatsoever. When she made ice cream she used non-dairy coffee creamer. Just wondering if this is something you've tried... Jessica you truly have a beautiful family and they are blessed to have such a wonderful mother (and father) I was gifted 3 oxtails several weeks ago and I made the most amazing rich broth which I canned and then I stripped the bones and have canned the meat to either use for ourselves or for our pup. The colour of the broth is so rich and dark and I have already used some for meatballs and then strained it and used it again for stew, both were absolutely amazing. Your video's are my Sunday morning treat!. Lx

I just want to thank you for telling me about radish pods. I know it’s not in this video, but I figured you would see the message anyway. Here we grow food year round (zone 10b), because I got sick we seeded and transplanted too late so nearly all of my radishes bolted. If you hadn’t introduced me to the pods, I would have feed everything to the chickens. Instead I now have 10 pounds of blanches radish pods in the freezer. Everyone loves them especially in stirr fries. I love them just steamed and sprinkled with salt. I also didn’t panic when a lot of my turnips, broccoli and cauliflower bolted, because I remembered you talking about seed saving. I have just left them, the bees love them and we will have free seeds next year.
I enjoy the dairy free “cheese” sauce. I make mine with soaked cashews, red bell peppers for the color and nutritional yeast. It pours beautifully and if I want to slice for sandwiches I add agar seaweed powder. I have noticed the dairy free and vegan cheese and butter alternatives and it really is just oils. I’ll be trying the canned butter nut squash in mine. Thanks for the great idea.

My husband's German grandmother taught me how to make oxtail's and sauerkraut. The first time I had this I didn't know if I could eat it, but I tried it and it was delicious! She served it with mashed potatoes. Most stores here do not carry oxtails, but I would love to buy some. I love watching your videos. I am Celiac and have lots of food allergies, so glean your recipes.

We’re empty nesters now, so cooking is not the same for us. Our youngest son is a chef, so he does a lot of the cooking for us. we make a hoop cover for our brassicas out of old blue plumbing pie and scaffolding debris netting and it keeps the cabbage white butterflies off. It does help alot xox

Oxtail soup is fabulous!! My mom fixed oxtail soup often, and she put barley into it, as well as a few potatoes. My family was not very well off financially, but we ate well cuz' mom could cook anything! Stuffed beef heart (stuffed with bread stuffing) was another favorite! LOVE your videos!!

You inspire me so much! Watching you being content at home has been such a blessing to me. 1 year ago when we moved to a new city for my husbands job, we prioritized buying a home finally. But then purchasing a 2nd vehicle got put on the back burner (he was previously in school remotely so we did fine with 1 car, but this new season was different) he also started work on a military base, and so i wasnt able to drop him off or pick him up. I was with my 2 kids all day at home (homeschooling 1 school aged child) and it was so so hard for me at first. We would go out around 4pm everyday after my husband got home from work, but i was always soo tired by then and couldn't find any other homeschool groups that met in the evening (although i did meet with a few families in the evenings, after making a fb post in a local homeschool group!) honestly i was depressed and it felt hard to continue on, even though it was clear this new city, this new season and this new job WAS a blessing from God, an answered prayer! Thankfully things are different now and i have the car 2-3 days a week, which is just enough for me to feel vibrant (and not isolated), and we have been able to meet new homeschool friends, pick a co op etc. but, your work is important jessica and as long as you can manage to make these TH-cam videos while also keeping your family as the priority, is a blessing to all of us.
Hey, don’t share the secret of oxtails! LOL! They are sooo expensive now because more people are eating them. During the holidays they went as high $45-$60 per tails. Crazy! Love your videos because you explain everything. No worries about redundancy at all because your cooking, canning, gardening, and food storage while being frugal wonderful.
Another great video! You are so good at thinking of ways to make healthy food fun. I like how you make things like the nacho dips and allow the children to make their choices of what they like. The breakfast tarts reminded me of the cookies my Grandmother used to make. She filled them with leftover fruits that she cooked down into a jam-like filling. Favorites were raisins or figs. I also have a tortilla press and love it. I use it to make beef or sausage patties also for the freezer. Quick and easy uniform patties. Great idea for cutting open a storage bag to keep things from sticking. That is so much easier than saran wrap and sturdy enough to do the entire batch. So many families are technology driven and they pile up in bedrooms and on couches to play, or see, the latest movie, or game.
As a medical coder, I read of providers urging parents to turn off the TV, and the games, and get outside!!
On another note, a neighbor of mine years ago had a son that had PKU. He couldnt eat any protein whatsoever. When she made ice cream she used non-dairy coffee creamer. Just wondering if this is something you've tried...

Jessica you truly have a beautiful family and they are blessed to have such a wonderful mother (and father) I was gifted 3 oxtails several weeks ago and I made the most amazing rich broth which I canned and then I stripped the bones and have canned the meat to either use for ourselves or for our pup. The colour of the broth is so rich and dark and I have already used some for meatballs and then strained it and used it again for stew, both were absolutely amazing. Your video's are my Sunday morning treat!. Lx
It amazes me that people find fault with what you feed your family! You are contentious about everything you do. You’d think people would cheer you on. Obviously, these are people who have never dealt with anaphylactic issues in their homes. Regardless, there, unfortunately, will always be people who would rather find fault than be supportive. Their loss.

I just want to thank you for telling me about radish pods. I know it’s not in this video, but I figured you would see the message anyway.
Here we grow food year round (zone 10b), because I got sick we seeded and transplanted too late so nearly all of my radishes bolted. If you hadn’t introduced me to the pods, I would have feed everything to the chickens. Instead I now have 10 pounds of blanches radish pods in the freezer. Everyone loves them especially in stirr fries. I love them just steamed and sprinkled with salt.
I also didn’t panic when a lot of my turnips, broccoli and cauliflower bolted, because I remembered you talking about seed saving. I have just left them, the bees love them and we will have free seeds next year.
I enjoy the dairy free “cheese” sauce. I make mine with soaked cashews, red bell peppers for the color and nutritional yeast. It pours beautifully and if I want to slice for sandwiches I add agar seaweed powder. I have noticed the dairy free and vegan cheese and butter alternatives and it really is just oils. I’ll be trying the canned butter nut squash in mine. Thanks for the great idea.

That sauce for nachos is brilliant!
My husband's German grandmother taught me how to make oxtail's and sauerkraut. The first time I had this I didn't know if I could eat it, but I tried it and it was delicious! She served it with mashed potatoes. Most stores here do not carry oxtails, but I would love to buy some. I love watching your videos. I am Celiac and have lots of food allergies, so glean your recipes.

I had 7 children with my husband. I’m was very blessed that all my children were healthy with no allergies. That seems it would be so hard to accommodate but I’m sure you had to get used to it and now you are a pro. Great mama.

Ox tail is rather expensive here and considered a delicacy with most tender meat which melts in your mouth, love it!
I don't know what those people are talking about feeding your children vegan cheese. You have beautiful healthy looking children, all a child needs is love fresh air and good food which you give them in abundance. Love your videos I learn something new from them every time I watch them. I guess at 72 years old your never too old to learn.

We’re empty nesters now, so cooking is not the same for us. Our youngest son is a chef, so he does a lot of the cooking for us. we make a hoop cover for our brassicas out of old blue plumbing pie and scaffolding debris netting and it keeps the cabbage white butterflies off. It does help alot xox

Oxtail soup is fabulous!! My mom fixed oxtail soup often, and she put barley into it, as well as a few potatoes. My family was not very well off financially, but we ate well cuz' mom could cook anything! Stuffed beef heart (stuffed with bread stuffing) was another favorite! LOVE your videos!!

You inspire me so much! Watching you being content at home has been such a blessing to me. 1 year ago when we moved to a new city for my husbands job, we prioritized buying a home finally. But then purchasing a 2nd vehicle got put on the back burner (he was previously in school remotely so we did fine with 1 car, but this new season was different) he also started work on a military base, and so i wasnt able to drop him off or pick him up. I was with my 2 kids all day at home (homeschooling 1 school aged child) and it was so so hard for me at first. We would go out around 4pm everyday after my husband got home from work, but i was always soo tired by then and couldn't find any other homeschool groups that met in the evening (although i did meet with a few families in the evenings, after making a fb post in a local homeschool group!) honestly i was depressed and it felt hard to continue on, even though it was clear this new city, this new season and this new job WAS a blessing from God, an answered prayer! Thankfully things are different now and i have the car 2-3 days a week, which is just enough for me to feel vibrant (and not isolated), and we have been able to meet new homeschool friends, pick a co op etc. but, your work is important jessica and as long as you can manage to make these TH-cam videos while also keeping your family as the priority, is a blessing to all of us.

Hey, don’t share the secret of oxtails! LOL! They are sooo expensive now because more people are eating them. During the holidays they went as high $45-$60 per tails. Crazy! Love your videos because you explain everything. No worries about redundancy at all because your cooking, canning, gardening, and food storage while being frugal wonderful.

Another great video! You are so good at thinking of ways to make healthy food fun. I like how you make things like the nacho dips and allow the children to make their choices of what they like. The breakfast tarts reminded me of the cookies my Grandmother used to make. She filled them with leftover fruits that she cooked down into a jam-like filling. Favorites were raisins or figs. I also have a tortilla press and love it. I use it to make beef or sausage patties also for the freezer. Quick and easy uniform patties. Great idea for cutting open a storage bag to keep things from sticking. That is so much easier than saran wrap and sturdy enough to do the entire batch.
