Cantonese-style Curry Chicken (ft. my Chinese Grandma)

  • Hey everyone, in this video my Chinese grandma “Popo” and I make Cantonese Style Curry Chicken. Every culture has a form of curry, what’s yours?
    Also, I like easy one-pot recipes that you can’t mess up and this is one of them!
    Recipe:
    2-3 carrots peeled diced
    2-3 potatoes peeled diced
    ½ white onion diced
    1 small piece peeled ginger
    2 chicken breasts (you can use chicken thighs)
    1 cup of water
    ½ cup chicken broth
    2 tbsp yellow curry powder
    1 tsp oyster sauce
    Corn oil
    Chicken Marinade:
    1 tsp dark soy sauce
    1 tsp light soy sauce
    1 tbsp yellow curry powder
    1 tsp cornstarch
    ½ tsp garlic powder
    White pepper
    Red pepper flakes
    1 tsp corn oil
    Procedure:
    Cut your chicken breasts into strips. Then combine flavorings and marinate them for 2-3 hours in the refrigerator. (Add the corn oil last to the marinade). Then cut your potatoes into thick wedges. Dice your carrots.
    In a large pot with corn oil, sauté the ginger and onion on medium heat, then add the potato and carrots followed by additional yellow curry powder. Add water and chicken broth and some oyster sauce. Cover and turn on high heat until it boils. After it reaches a boil turn the heat down to medium and cook for 15 min. After 15 min the potatoes should be soft. Now add your marinated chicken on top of the potatoes, cover your pot, and steam for 5-7 min until chicken is cooked. Finally, mix and serve with white rice or any type of noodle or bread.
    This is a perfect hearty dish to feed your family.
