Soy Sauce Chicken (ft. my Chinese Grandma)

  • Today we are making one of my favorite dishes, Soy Sauce Chicken. This is our homestyle version. My grandma has a unique braising method that I will outline below.
    The recipe below (rough measurements):
    Chicken thighs & legs
    Soy sauce chicken sauce or (Soy sauce, oyster sauce, water)
    2 sprigs of scallions
    2 pieces of ginger
    1 piece of cane sugar (you can use some white sugar)
    2 teaspoons rose wine (you an use white wine)
    Spices:
    Anise (optional)
    Dried orange peel (optional)
    Eggs (optional)
    Procedure:
    Clean and trim off some fat from your chicken. Then in a large pot, add your soy sauce chicken sauce (one whole bottle). If you would like it less strong, add some water. Then add your flavoring agents (scallions, ginger, cane sugar, anise, dried orange peel, and rose wine).
    Now my popo's complicated braising technique:
    1. Bring soy sauce liquid to a boil, then shut it off
    2. Place the chicken in the pot and cook for 2 min
    3. Now turn the stove back up to high heat and cook the chicken until the liquid boils again, then bring the heat down to low. Repeat this process 3 times. It should take about 30-45min.
    Why do we do this? Because this method allows the chicken to soak up all the flavor while still maintaining some texture. We are not going for the fall off the bone style. Also, the longer you cook it, the more salty soy sauce flavor it will have. Just be aware of that.
    If you want to use Michael's easy technique. Bring the soy sauce to a boil, place the chicken in and then bring the heat down to medium and cook for 30 min.
    Also, on the side, we hard-boiled some eggs for 12 mins. We let them sit in the soy sauce for about 10-15min to soak up the flavor. Don't forget you have to peel them before they go into the soy sauce.
    This is a delicious/comforting dish. Serve with some white rice and some green vegetable and you will be very happy.

    Michael, you are so lucky to have your Grandma to teach you some home cooked Chinese recipes. I love home cooked Chinese foods, not necessarily Chinese American foods in a restaurant. Your GM is gold! It's so awesome that she's speaking with you in Chinese and you are able to understand everything that she's is saying. How cool is that?!

    Thank you Michael for sharing these cooking videos of your PoPo. She reminds me of my PoPo with her cooking skills. I was only 12 years old at the time and did not have much interest in learning to cook. When I turned 13, I was fortunate to learn to cook Chinese meals from my Dad (also, he was an excellent cook). I am glad that I stayed in the kitchen and watched. Also, asking questions and took notes.

    Wow, Michael. The videos remind me of my grandparents. Like you, my grandparents came from the Hong Kong or Guangdong area. My grandmother was also from the Toisan area. My grandparents settled in America in Philadelphia Chinatown. They made all of the traditional Chinese recipes that you are sharing. Perhaps, your po po can share her recipe for Haam Yu Jing Yook Beng, Steamed Salted Fish and Pork Cake, 鹹魚蒸肉餅。 Cherish the moments you have with your po po. They are very special.

    Por por makes it the way my mom makes it. No water added and hers is always better than mine of course but I am not sure if her technique is the way same por por's. haha lol but looking at the end product, looks very similar to my mom's legit. 👍🤣

    Really authentic recipe, Michael! I do this nearly similar but missing out something.. yr Popo techniques is fab.. Boil it quickly n off 4 times. Theres the logic in it I see..This is something I had wanted to discover d secret f a long time.. Pls say, TQ Popo. 😘 Haha she has a gd sense of humour..     You can do it, Michael! The heat turned off from the boil, under the lid, keeps the chicken moist, not over cooked. The secret is to not lift the lid for at least 20mins. Use fresh chicken or chicken pieces. Not frozen ones, otherwise the thicker parts, eg thigh and drumstick, wouldn't cook through. Enjoy.

    You and Paw Paw make it look so easy! I tried this recipe with the Chicken Marinade Sauce. Added the onions, ginger, and sugar cake. What you didn't say is the on/off braising needs to be watched! I walked away. It overboiled and sauce was all over the stove! Ar-r-rg!!! So a question: after boiling the sauce to save for later: should I strain the scallions/ginger before putting sauce back into the jar?

      Omg hope everything went well. Yes forgot to mention to watch it and depends on the depth of your pot. You can strain the ingredients but it’s not necessary. Most of them are in big pieces so you can simply pick them out.

    l would love to know the brands (name) of any sauces (soy, oyster, hoisin, wine) used. I know you aren't being paid by the makes but it would help when I go to the grocery store and stare at 25+ bottles of soy sauce :-) Thanks so much to both of you for doing these videos!
