AIR FRYER CHINESE BBQ (Char Siu & Siu Yuk) ft. my Chinese Grandma

  • In this video, My grandma "Popo" shows us how to make two Cantonese BBQ staples in the Air Fryer! (She loves it btw)
    Char Siu - Red colored BBQ pork & Siu Yuk which is crispy pork belly. The rough recipe is below. (Remember we never really measure, but I've done my best to transcribe her recipe.)
    This is our Air Fryer BTW - Emeril Lagasse 12-Quart Air Fryer Pro

    Char Siu (Roast Pork) Ingredients
    2 lbs Pork Butt or Shoulder
    Sauce
    2 tbsp Hoisin sauce
    1 tbsp Chou Hou sauce
    2 tbsp Ketchup
    2 tbsp Honey
    2 tbsp Char Siu sauce
    1 tbsp Oyster sause
    3 tbsp Shaoxing wine
    1 tbsp Neutral oil
    1 tbsp Sesame oil
    Dried Orange Peel or Orange zest
    1/2 tsp White Pepper
    2 tbsp Rose wine (add that just before cooking to keep it's fragrance)
    Char Siu (Roast Pork) Procedure
    Mix all the ingredients for the sauce above. Then add your meat to the mixture and marinate for 3-4 hrs. My grandma likes to leave it out at room temperature to marinate for at least 30 min before further marinating it in the fridge for about 3 hrs. Be sure to remove it from the fridge at least 30 min before cooking, so it's brought back to room temperature. You can marinate it in the fridge over night as well.
    We cooked it at 375 F for 15 min, adjusted the placement of the racks, cooked it again at 375 F for 15 min. And lastly cooked it again at 375 F for 10 min. If your air fryer is smaller you may not be able to cook so much meat at once, and it will cook faster. We get more direct heat on the top rack of our air fryer and the middle rack does not cook as quickly.

    Siu Yook (Crispy Pork)
    Ingredients
    5-6 large pieces of pork belly cut in about 1 inch 1.5 inches in width
    Dry Rub
    1 tsp Salt
    1 tsp Sugar
    1 tbsp Five spice powder
    2 tbsp White vinegar (apply to the skin)
    Siu Yook (Crispy Pork) Procedure
    Blanch the pork belly in boiling water for 5 min. This is to make the skin softer. After it's blanched, remove it from the water and let cool for 20 min.
    After it's been cooled, take a towel and dry the pork belly. Then take a fork and prick the skin (be careful). You should have little holes on the skin. This helps it get crispy. Then rub your 5 spice mixture on all slides of the pork belly EXCEPT the skin. Then apply white vinegar to the skin 3 times. For each vinegar application, wait 5 min before applying more vinegar. I don’t know if this method actually works, but the idea is that the vinegar will soak into the little holes. The vinegar helps the skin crisp up.
    Then we refrigerated it for 3 hrs and took it out of the fridge 30 min before serving. The skin tightened up.
    We cooked it in the air fryer on the top rack, we constantly monitored it and adjusted the temp.

    400 F 5 Min
    Serve with buns, rice or whatever you like. It comes out great in the Air Fryer! If you don't have an air fryer use your oven. We took the Char Siu marinade and brought that to a boil to kill the bacteria.

    👏🙏🤤💯 Reminiscent of the love and "gentle" scolding me and my sibs would receive when we would help in our Popo's kitchen -- they go hand in hand! My Popo is 98 yrs old and retired from cooking, but her woman warrior Cantonese home chef spirit is channeled through your Popo. TY Michael & Popo! 💯❤👍

    You're lucky to have ah-por. My great-grandfather was an amazing cook & very well known for cooking a whole roast pig to perfection, every time. He passed when I was 15. My ah-por passed in 2020 in NYC but I live in NZ.

    Both you and Popo are amazing. I love the relationship you have, most endearing and precious. Popo is still cooking like a fiend and a Chinese bbq sifu. The roast meats look delicious, especially the chasiu. My Mom makes a mean chasiu too and I learned from her, much better homemade than store bought b/c it is fresh, soft and juicy. You and Popo have great communication and perfect timing like a comedy team, in the best way. lol. She is spunky, witty and funny as heck. I really love her. And you are an amazing young man. I'm glad you learned to speak Cantonese. I am Toisan born in NYC. At home, I speak only Toisan with my parents, grandparents and relatives since they do not speak much English. I am proud to be bilingual, and also, to learn Cantonese and Mandarin.

      Hey Minnie thanks for your kind heartfelt message. You know I never valued spending time with my Popo when I was younger or Chinese culture for that matter. I feel like now since I'm out of my restaurant job and back home, I have had time to reconnect with my family in ways that I never did before. I'm happy to learn Popo's recipes now and spend time with her. These are the best recipes and I did go to cooking school. Wow you are very impressive speaking so many languages. We are also Toisan, my grandfather was and my mom and Popo also speak Toisan. Thanks for your message Minnie. Wish you and your family health, wealth, love and happiness.

    I am doing a marathon of your videos with your poh poh. She is amazing! Classic Toisan/English accent. My grampa had the exact same accent and impatience! Hahahahaa. Please do more videos with her! These are memories and recipes to pass down for future generations. Yes "hong yuan" would be great especially since Hoisan people eat it on winter solstice. Does she make baos?? Does she make doong? Cheung foon? Ask her if she makes "faan saw" classic Hoisan dimsum! Thanks for sharing her with us! Please don't tire her out too much!

      @@MichaelNicastro I use to make doong with my poh poh...then mom took over. She has not made it in well over 20 years. She is in her 90's now. She refused to make it. Well I bought all the ingredients. And told her I will make it. Knowing full well I would trick her into "showing" me how to make it. Get your mom involved ;) Cantonese do not make "faan saw" it is strictly a Hoisan dimsum ;).

      We bought this air fryer, it's good, however, the top rack and middle rack don't cook evenly. It's like an oven. www.costco.com/emeril-lagasse...

      Yeah I'm very lucky, I did not embrace her when I was younger so I can make it for lost time. Popo does not know how to speak Mandarin, she can understand a little bit that's all. She came to america when she was 13 so she learned english.
