The stuff in between cobblestones on maps like thwomp ruins, luigis mansion, animal crossing, hyrule circuit and sky garden is moss so you are actually good to go.

To get the gold wheels you have to beat every staff ghost on the non-booster course tracks on 150cc time trials.

In fact, if you use regular Metal Mario, the Sneaker (or Bounder in UK), the Metal Tires and the Plane Glider, you then have a cheap alternative to the gold setup. Same stats and everything!
The only difference is that the cheap version has a HIGHER invincibility stat than the gold stuff, making it even better!

The "grass" on the stones in thwomp ruins is actually moss which isn't considered grass
For the ones with grass in the bricks I’m pretty sure it’s just moss
He needs to make a Part 2 of this once the rest of the Tracks come out.
You know I don’t know if I’ve ever seen anyone do it, but I’m interested how hard it would be to play every course but with the camera facing the wrong way. Could be an interesting challenge

I took the liberty of analyzing the Mario Kart ride at Universal Studios for this challenge. Your kart does not touch grass at any point.

Thwomp ruins “grass cracks” was MOSS
Even though it's not technically a 'don't touch green' challenge, it basically is just that as most of the green we see here is just the grass in that course.

Twisted mansion looks like clover. not grass.
Hyrule castle is clover and moss.
Ribbon Road has grass. Astro turf is grass. Synthetic grass.
Also dead/brown grass is still grass.
