i like when smaller casual places stick to a relatively simple menu, and they commit to doing what they do really well. every single plate that was sent out of that kitchen looks far healthier (and tastier) than your classic fast-food burger and fries. and the guy on the range is just so organized and awesome at his job.
Even with the number of covers that restaurant is doing, that kitchen is CLEAN. The service was tight! That's a well-oiled team in action. It's a pleasure to watch.
@@ornnwyming7562 I've been hearing/reading that overwork is an issue in Japan. Look up, "Karoshi". Regardless, these people are on point and run a great kitchen. But yeah, I hope they get paid well and don't have to work crazy hours.

Because they have everything preprepped and have their own system in place, they are not skipping steps. They are working efficiently while doing everything safely. They remain clean and sanitized every step of the way

Knowing exactly what to do and no need to think about what to do next make you feel your work times much quicker and easier. When my work place is quiet, I feel bad for doing nothing and yet being paid. Some (NOT all)of my friends like busy work place, too. I don’t know if it’s a Japanese thing, but it’s not that rare thought as a part time worker.
This is just evidence of what optimizing your processes does for your service. Everything is either made just in advance taking into account their usual workload, and max workload, and every step is well thought out. When it comes to serving, the cook finds his plate ready. Makes me envious lol

You gotta respect what it is. It ain't fine-dining by any means but for everyday working people in a hurry looking for a hearty, filling meal. It's satisfying to see plates flying out of a kitchen because of a smooth and efficient system.
It doesn't have to be fine dining, honestly. An honest to God quick nutritional meal served fast is more than enough. This was a pleasure to watch, even if I'm not entirely down with the Japanese hambagu concept.

On its own, as the centerpiece of the dish, it's kinda boring and somewhat unappealing to me. Tl;Dr: Burger with bun, steak as it is. No burger as steak.
It's just the culture. You can hear it's robotic and automized. They probably don't even realize they are saying it most of the time and just autopilot the sound.

That is so, so impressive. The care. The attention to detail. How much they take the time to do it right. One note; this is more like a Salisbury steak or a mini meatloaf patty than a burger. Still, really loved this.
These are very similar to minced meat cutlets which are very popular in Poland. We usually eat them with mashed potatoes and pickles or beetroot salad. :)
I like how they setup to have each order cook so fast. The the hamburgs are partially cook. The pans are sitting on flame so they are already hot for when they throw a hamburg on it almost immediately finishes the cook process and it looks like they keep the sauced warmed and not at room temp so they heat up faster further helping speed and continuing the cooking process when they place the pan on the tray to be served.
And they keep the partially cooked hamburgers over the cooking area, both keeping them in proximity of the chef, and keeping them hot. If you look closely the bottom of those are on rollers, allowing more airflow to the bottom of the trays.
This is Pepper steak type fastfood where they serve the dish on super hot grill plate, so you are cooking your food. That looks good tho, the portion size. I am hungry now and I want a burger steak.😅

Japanese restaurants are so efficient, not to mention cheap! Lunch set is 840yen (less than 7USD) and the norm throughout the country is that the main lunch menu changes daily and do not break the 1000 yen barrier.
its also a massive struggle, the 1000 yen barrrier. Many of these restaurants are barley breaking margins. They need very high volume headcount. A lot have to close down, if they get a really bad month. Ramen restaurants are always opening and closing from what I heard, because of this fact. We often don't get videos of before and after for many restaurants in Japan, unless its already a famous one. A lot of them do end up shutting down, its a very competitive and struggling industry in Japan. Why Chain restaurants are such a big thing in Japan, they already have decades of developed infrastructure.
This reminds me of a certain place we used to go to after school. Oftentimes, they were so fast at serving that their server will actually wait for you to get out of the cashier line *already carrying your food and waiting for you to tell them which table you want.* There's only a small window that customers can see into the kitchen but based on what I've seen in my 6 years of eating there, they're really fluid and really clean, even during rush hours when almost every table is filled. Great food, and you can hear that they're happy as well while running around. Really liked the video. Thanks a bunch!

It's not just the efficiency of the staff but the taste and quality of what is prepared which made my time in Japan great. I would highly recommend everyone go to Japan and experience the culture and cuisine. I got a world class steak in a Mall, I'm eating restaurant quality food out of vending machines and family marts (A convenient store). Just an amazing experience.
The kitchen has really streamlined their business operations. A few things to note they pre-made everything ahead so they have pans and trays ready of product at an easy to reach location in the kitchen. The chef pre-cooked one side of all the burgers so all he has to do is finish the other side. The dishes are the pans so you don't need to spend time plating dishes. The menu is simple and each assistant is assigned a predetermined job station. This is basically how a McDonald's would work if they cooked everything instead of using their warming machines.
I can appreciate that there is no unnecessary gabbing and time wasting. Great work ethic! Having said that, those appear to be closer to Salisbury steak than burgers

There's a chain called meat rush in yodobashi cameras that does this with a semi open kitchen. It's exactly what's on the tin- meat in a rush. Some of the best value in steak you'll find anywhere and the crews are fantastic. The accuracy of everything is mind boggling. The biggest thing I take away from every time I go to Japan is how precise everything fits/works. Everyone seems to have encountered every situational variant there is related to their task and know exactly a trained in reflexive protocol to deal with it that's already been vetted by the old hands guiding the crew.
Japanese ハンバーグ (Hambāgu) isn't a hamburger (ハンバーガー). It's more like the German dish Frikadellen. It's similar to a U.S. meatloaf but not, it's very juicy and savory.
Other than really expensive Japanese beef, most Asian countries have cheaper version of American hamburger and steak. More fillers in the hamburger, thinly sliced beef or reconstructed meat instead of real steak. But Japanese hamburger and curry are delicious nonetheless.
Most ppl don't understand is that there are giant waves of ppl coming in at the same time! Everyone travels by bus so when it stops at a particular spot, everyone gets out... You have to be a well oil machine to serve waves of ppl in a quick timely efficient manner!!! Bravo restaurant 👏👏

This is something I have never seen before. They cooked the hamburgers in under a minute after ordering and serve to the customers. Super fast and super tasty too. I hope one day to go and visit this restaurant. Greetings from Canada!!
They did this by precooking the burger. They are able to get away with this because they add bread crumb, eggs and other additives so the patty stays moist even though it was par cooked earlier. All they are really doing in a minute is warming it and the sauce up in the sizzling cast iron skillet. In the US, Jack in the Box tried something similar by precooking their Pattie’s and leaving them in broth to keep them moist. Sadly, they did not follow good food safety practices and ended up killing a few folks with food poisoning. This is why this kind of cooking is very tightly regulated in the US. You have to be careful not to poison your customers.

I believe it's a mistranslation, Japanese has two words:
Hambagaa = Hamburger
Hambagu = Burger meat

There's a chain called meat rush in yodobashi cameras that does this with a semi open kitchen. It's exactly what's on the tin- meat in a rush. Some of the best value in steak you'll find anywhere and the crews are fantastic. The accuracy of everything is mind boggling. The biggest thing I take away from every time I go to Japan is how precise everything fits/works. Everyone seems to have encountered every situational variant there is related to their task and know exactly a trained in reflexive protocol to deal with it that's already been vetted by the old hands guiding the crew.
That's what happens when people accept guidance, instead of thinking they need to be different just for the sake of being different.

Other than really expensive Japanese beef, most Asian countries have cheaper version of American hamburger and steak. More fillers in the hamburger, thinly sliced beef or reconstructed meat instead of real steak. But Japanese hamburger and curry are delicious nonetheless.

Most ppl don't understand is that there are giant waves of ppl coming in at the same time! Everyone travels by bus so when it stops at a particular spot, everyone gets out... You have to be a well oil machine to serve waves of ppl in a quick timely efficient manner!!! Bravo restaurant 👏👏

This is something I have never seen before. They cooked the hamburgers in under a minute after ordering and serve to the customers. Super fast and super tasty too. I hope one day to go and visit this restaurant. Greetings from Canada!!
They did this by precooking the burger. They are able to get away with this because they add bread crumb, eggs and other additives so the patty stays moist even though it was par cooked earlier. All they are really doing in a minute is warming it and the sauce up in the sizzling cast iron skillet. In the US, Jack in the Box tried something similar by precooking their Pattie’s and leaving them in broth to keep them moist. Sadly, they did not follow good food safety practices and ended up killing a few folks with food poisoning. This is why this kind of cooking is very tightly regulated in the US. You have to be careful not to poison your customers.

オーブンで大量に焼いていくハンバーグは佐賀県の鳥栖市発祥で、ミスタージョージも本店はその辺りのお店だったかと思います
鳥栖に行くと、このお店と同じ作り方のハンバーグ店がたくさんあるのでオススメです
