C/w Nana: Lao Dipping Sauce for Mango (ແຈ່ວໝາກມ່ວງ == Jeo Mak Muang)

  • In this video, I show how to make a dipping sauce for sour green mango or other sour fruit. There are many, many ways to make this, but these are some of the basic ingredients. I like my jeo very thick so it sticks better to the fruit. Feel free to adjust to your liking.
    This sauce can last for several weeks if you store it in the refrigerator. I have also left it unrefrigerated for a long time without any ill effects. If it dries you, you can just add more fish sauce.
    I showed two brands of fish sauce. You can use any brand you want. I don't mix different brands unless I really have to (no particular reason).
    The roasted rice I used is homemade. I just roast some uncooked glutinous rice in a pan with no oil until they are tan or a little black. Then grind or smash them with mortar and pestle.
    This video is in mostly Lao language, but I have my baby girl Talina translating to English.
    INGREDIENTS
    1 cup Fish Sauce
    1/2 cup Sugar (add more to make it stickier)
    1/4 cup Roasted Rice Powder
    1/2 cup Dry Roasted Chili Peppers (as much as you want)
    Fresh Chili Peppers (as much as you want)
    3 Shallots
    1 tbsp Shrimp Paste
    1 tsp MSG (optional)
    The amount of each ingredient can be adjusted to suit your own taste.

    I luv her cooking show n how she explain in laos n English.. she very detailed with her ingredients n she not to fancy with her pots n pans she make me feel very warm at heart while watching her show..she uses original brand's ingredients like wat we are familiar with in our household.     I REALLY enjoyed watching this video- not only because you and your daughter are so cute together cooking, but because this was one of the first Lao dishes that a friend taught me how to make! Her rendition was pretty close to yours- the only differences were that she didn't use the rice powder, and used garlic instead of shallots; everything else was exactly the same! And I love this dipping-sauce... because it's so sweet at first... and then the sugar dissolves.... hehehehe- LOVE IT! I will try your way very soon- looks so good!

    It's Great you allow ur daughter in the kitchen as your shu chef cus then shell learn how to make all these amazing dishes you make. My mom always wanted me to study so I never learned how to make any of these stuff, I always run to moms house to eat authentic Lao food.

    Thank you for uploading this video. I am Lao and Vietnamese but I am trying to get more in touch with my Lao side and learn some dishes. Since I've moved out of my house for the past couple years, I've missed my mom's cooking. I've always loved Lao food but its so difficult to make considering the many ingredients, but I'm prepared to learn from you; so thank you and hope to see more uploads in the future!

    Vong, to make "khao kua" you just roast uncooked sticky rice in a pan until it is dark brown or darker. After it is as dark as you want without burning it, smash the rice with a koke and sahk (mortar and pestle) or use electric chopper.

      after the sugar was roasted rice powder (khao khua). The ingredients are listed in the video description. You can divide up all the ingredients if you want to try just a little bit.
