We have a variation of this dip in Vietnam too, and I gotta say it goes so well with sour crunchy fruits. People commonly say women during their pregnancy adore this combo, I would say non-pregnant folks love them just as much lol
In Vietnam here, we just mix fish sauce with sugar and thai chillies (make sure it’s extra spicy), no need to cook at all. We dip green mango in that sauce (espcially when that mango is too sour to eat).
I made this and brought it to my office as a treat. It went very well with celery sticks, french carrots, crowns of the broccoli, granny smith (of course) and the sour strawberries. Everybody loves it. They dipped their fingers into the sauce when the veggies were gone. Thank you!
This recipe is definitely fabulous. It tastes almost the same like they sell in chatuchak market in bangkok. I use all my local ingredients (gula jawa, local shrimp paste, and local dried shrimp which I pounded manually by hand) and for the fruit itself, I use local “bangkok” guava sold in my country. 😋
i have just started loving nampla wan when i went to the ratchada night train market...they sell the diluted kind like the one in this video...but they also make the dried paste kind and both are sooooo good with some crunchy green mango or koesavoey mango...just the other day i bought a small tub and finished with one whole mango all by myself lol
My mom add dried shrimp like tripple of your recipe and a little more challot and use dried chilli instead of fresh, yum. 😋 And we just got a chance to have high quality fish sauce in hand, it really make our nam pla waan taste even better!!

Fermented krill paste cooked with bird's eye chili and sugar is probably the closest. How liquid-y it is depends on individual preference. Other ingredients (shallots, cocoa powder, etc. are optional)

In my family, we blend the red/green (bird eye) chili mixed with palm sugar, tamarind juice and 1-2 tbsp regular sugar for extra crunchy when bite the fruit and make it thicker. Sweet & sour from the fruit, sweet,sour,spicy from the sauce is the best combination. You will never stop to keep munching it
In Indonesia Some Region add Peanut , or add Ripe " kaweni " / Soursop for make the condiment more sour or add kecombrang ( according google Thai people call it as daalaa ) to have a stronger taste.
It's samiliar with rujak. Have you tried with star fruit? It's so good. Also some people like to add bengkoang but personally I don't like it. My mom likes almost ripe papaya and my sister likes chompoo or rose apple the most
In Indonesia, we called this RUJAK!! And we just have to have them around 3 PM in the afternoon. The spicier the better. In some cities they just put in shrimp paste instead of fish sauce. But in Bali, they have the fish version. Best when you just use white sugar instaed of palm, and eat with with young mango. Super delicious!!

Looks tasty. I was confused at first cuz I thought the dip was supposed to contain fruit itself. I wonder how this would work out if you cook it into a hard candy. I doubt it would last too long, preservation-wise, but it would an interesting treat.

I love this stuff!! But when it comes to SUPER sour fruits like the tiny sour mangoes my family usually just thinly slice it and dip with straight fish sauce or shrimp paste lol
In Philippines wi sauted the shrimp paste with garlic,shallot,tomatoes, then add the shrimp paste ,then adding the sugar and the last part is vinegar.( so it taste salty and sweet and tart not much) and im using spicy shrimp paste already.
We have this in the Philippines, but we use cane sugar rather than palm sugar. We add rock salt too, this reduce the unpleasant fishy-smell odor from the fiah sauce. We don't have thai chili, we only put 'labuyo' philippine birds-eye chili.
It kinda reminds me of a reversal of something like orange chicken, lol. Instead of coating meat in fruit sauce, we're coating fruit in meat sauce :) Sweet, salty, sour, and umami.

Those are called พริกเกลือ (chilli and salt). Two different things but same function.

In Mexico we have a dip that we love putting all over all our fruit called Chamoy. It does not contain fish sauce but it is soooo delicious 🤤
