❤️👍😀 I love stuffed mix vegetable parathas made the way you have in your recipes. They are wholesome, nutritious and fulfilling to my tastebuds! Especially on cold winter days. I especially hold memories of eating stuffed mixed vegetables paratha with curd and pickle at a small eatery/shop in Hounslow/London. When I went for a trip with my [late] husband. That was when he was a flight purser in the airlines/AI. I need not say much except that we were both starving and in need of sustenance and for something inexpensive to eat. As we were to do some shopping which was to be brought back to Mumbai for sale. I had not been on a date with him and this was one of the few that I remember. We took a bus to the bus station and just across there was a store besides a pharmacy and so we could grab a late lunch there. It no ;onger exists. I have tried making them but I can't flatten them as they spill or burst open! I have not been anywhere out of Mumbai/out of my home on a trip since 18 years! Moreover it's been 8 years since his death of heart failure and this room which he occupied before he migrated to Canada in 2010. In 2013 he expired. I am certain that this paratha was one thing he could cook himself. Infact seeing him I picked up on making roties/parathas. Of course, I can't perfect the stuffed ones. I love the Kathi rolls which is the chicken/beef kebabs filled in the middle of egg parathas. Full of onions,grated cabbage,carrot,radish,lemon squeezed,green chillies,pudina chutney,tomato sauce/chilli sauce,etc. The kebab must be succulent. Iam trying to pick up from cookery channels. As I have stayed all alone all my life. Busy with my sons and my house work. While he [the main bread winner] was on air trips to various international destinations.
