This soup is soooooo delicious! The key is the garlic. I think I ended up throwing in 8 cloves altogether. A couple were stuck together when the peel was still on. So delish! I also used veggie broth and a drop of lemon juice at the end.

I make this recipe often but with no packaged broth. I use plain water. All the ingredients make lots of flavor. That’s how the original recipe is take it from me I’m old and I also make it with other green such as spinach or kale or broccoli, rabe. Whatever is in season or whatever I have on hand.

Hi Dani,this soup looks good and I look forward to making it may want to add some spinach to it also but I’m trying to lose weight again because of my health and I’ve started basically a Mediterranean diet lifestyle which it appears like most of your recipes would follow those rules except for any white rice I would trade out for organic whole grain rice or noodles whole-grain noodles wouldn’t you agree to that?
Where can I buy this salad spinner? I don't have one but this one seems very handy. I usually dry each salad leaf separately with a paper towel but it takes a really long time plus it's a waste..
Has anyone tried this recipe with some type of greens? Collards, Kale etc. I hate to tamper with a good recipe, but I do love me some hardy greens. Thanks.
This recipe is very good but way too salty between the recommended no straining canned beans and the chicken broth plus added salt. My mouth tastes like an ocean. I would make this again but strain the canned beans and no additional salt at all considering there’s already a lot of salty ingredients (parm cheese)

It turned out awesome. The only addition I made was a finely chopped large shallot with the garlic and a Parmesan rind.
I love this recipe from your book. I have also used Great Northern beans for this recipe and it worked well, too.

Escarole isn’t available where I live, is there anything I can substitute it with?
You can try baby bochoy or the bochoy. If none try organic baby spinach.
Kale or swiss chard could also work.

I followed the recipe exactly and found it to be bitter. I’m sorry I didn’t blanch the escarole first.
