I'm 60 years old now, all of my family is gone, but you just transported me back to a time that put a smile on my heart! Thank you for all you do and always bringing back such fabulous memories!! I'm glad you enjoy Pasquale's recipes as do I, & i'm an Irishman from rural Kentucky, i'm recently on a disability retirement( 22 scope surgeries in the last 11 years on my back , along with other health problems) , but shows like this help me get thru the day from not being bored, i'm guessing they do the same for you, God Bless you.

Unfortunately my grandmother passed when I was 9 yrs old & didn't get the honor of learning to cook /W/ her. But I sure enjoyed learning to cook /W/ my Mom & Aunt. Pasquale, we try & make this in rural Kentucky, if we cannot get cannolini bean's we use great northern beans, if no escarole we use kale, & we use the the onions in the recipe, but we also cut whole sweet vidalia onions in wedges to eat on the side raw, very popular in rural Kentucky, we sometimes eat the sweet ones raw like fruit, lol., anyway, great recipe. btw, if we cannot get italian bread loaves, we use homemade cornbread with real butter, it is good.

Escarole and beans with white sauce is the standard one we cooked at home. My grandparents always put fresh virgin olive oil on top with crusted bread ( they had a bakery do we always had fresh bread and sweets in the house). We also used some pancetta or guancale in the mix when frying onions and garlic for deep taste. I always love escarole and white beans...thanks for the recipe Pascuale! My mom made this all the time (she used red pepper flakes with the garlic and onions) and always added Parmesan cheese on top to individual bowls. Thanks for the great memories!
Escarole and cannellini beans was a staple in our house growing up. My mom made this at least once a week. It’s such a healthy dish too. We used to dip rustic Italian bread into it. So delicious 😋

My favorite is the white. I cook oh yeah baby in the oil with the garlic. We love it. Now watching you I have to make it again because my mouth is watering.
I have made this using swiss chard too. I always add some form of pork or chicken to this dish and definitely a bit of clove and nutmeg. I also never make a soup where I don't crumble in at least one leaf of dried sage. I wouldn't think a hint of white wine would hurt this either. Yummy! Thanks for the recipe.

My Mom always made escarole /W/ beans, same as you do, plain or /W/ sauce. Some times she served it over macaroni. Years ago we didn't eat meat on Fridays, so she'd made this /W/ the macaroni. But we loved pecorino Romano cheese on top. And it just isn't right to serve this without crusty bread. Divine, scratch made, and if people are vegans they can use vegetable stock for this.
My kind of recipe, like Nonna made, thank you! The dried chilis, my Nonna grew those too. What I did, is I took leaves off, and scrubbed them each, under water. A big bowl to soak is good too. Salute!

I made this tonight but with cabbage instead of escarole because you just can't find it in rural Ireland. It was hearty and delicious along with a few pork chops.

This is my favorite dish of all times i cook mine with bacon i use a whole pound cut up and fried only half way then i put my Garlic in some of the bscon grease then add the beans back in then my escarole and water back in i
My Grandfather Salvatore used to add orzo and separate the escarole after everything cooks together. He always said "escarole is the dessert" Love that stuff.
