You're welcome, Jean. You could say jaggery is a kind of unrefined sugar. In India it's mostly made by thickening sugarcane juice. If you don't have jaggery, you could use an equal quantity of brown sugar.
Hi! Thanks for getting in touch. For the lime crush you don't have to boil the limes first. After you freeze the cut limes, you have to grind them in the mixer grinder to make a crush and then boil this crush with the other ingredients.
Veena I need some help. I did not know you demonstrate pickles too. My husband bought sour limes yesterday and planned to make pickle since he loves it as an accompaniment. He put rock salt in a vessel with a little water and allowed it to simmer till it melted and became salt again. Then he added the limes cut in 8 pcs added some spices. When I tasted the salt was too much so bought 6 dour limes today made a mixture of water and vinegar boiled it well then cooked the limes till the skin softened took a while. Then cooled and added to the ready salty pickle. Can I pressure cook the same. I will add a little jaggery. How do I pressure cook in case you say I could do. Can I add water in the cooker and steam the pickle in another container and for how long. Is there anything else I could do to make the pickle tasty. Hope with the mess I am in something can change the same.
Now that the skin of the sour limes has softened, you don't have to pressure cook them. Don't add any water. Just add some grated jaggery, chilli powder, and ground cumin and cook till the jaggery forms a thick syrup. Cool and store in the fridge. Hope this helps.
@@PataCake veena grateful for your response. I thought you might be busy hence no response and filled 2 bottles. We dont keep any pickle in the fridge as it matures outside. After a couple of months will let you know how it is doing outside the fridge. I tasted the same the salt has lessened since I added vinegar and water so it is not too sour. It is doing good. I have kept it in the cabinet
@@Larry-qf7lw , since you've added water to the pickle, in my opinion, after a few days it would be better to store the pickle in the fridge. But of course, you'll have to decide about this.
If the water content is kept to the minimum and there's enough vinegar in the pickle it should stay good outside the fridge without getting fermented and spoilt.

Hi there! Glad you're trying out my recipes and thanks for the appreciation. Coming to your questions, no, this being a lime (or lemon) pickle, you don't need to add vinegar to it. Yes, you could use regular sour limes, like I have done in the recipe. This being a quick pickle it has a shorter shelf life. It will stay good at room temperature for around 8 days but for several weeks in the fridge.

You have to be careful not to make the syrup too thick and also to turn off the cooking within seconds of adding the sour lime pickles. Once you get this right with a small quantity, then make a larger one. The second recipe, the pickle crush, is a more straightforward recipe, easy to make. Cant we keep the pickles out of the fridge. This lime pickle which we attempted was kept out of the fridge for almost a year
