In my recipe too the quantity of vinegar is sufficient for the quantity of pickle. But depending on how you measure all your other ingredients, you might need to add a little more or perhaps even slightly less vinegar. However, if the vinegar added is a little more, it won't matter. But it shouldn't be less.

You're most welcome, Rufina. If you cover the tendli with cling film, the moisture from the vegetable will stay trapped inside under the cling film, But a muslin cloth will protect the vegetable from dust and also allow the sun to dry it by removing the right amount of moisture. You can also air dry the vegetable slices by keeping it the tray on your kitchen counter for a few hours. We don't want too much of the moisture to be lost. If you over-dry the vegetable the slices could become tough.
@@rufinapo4124 , you can dry the tendli in the sun covered with a muslin cloth. But don't over dry it. The slices should only curl up a little. And you can use any vinegar, Goan or synthetic / white or any other vinegar.

Yes, you can, Ella. Only let it thaw completely first. Then rinse it with plenty of water and squeeze out the excess water. After that proceed as explained in the recipe.

Yes, you can store this pickle in the fridge, Amelia. It will stay good for several months. If it lasts that long! I don't have a recipe for bhendi amsol, but I'll surely add this to my list of requested videos.

I used half a cup of oil to saute the spice masala but noticed while stirring the masala the oil was not enough so I added another cup to it and continued with the recipe till the end. I then poured it into the jar, there was no oil above the pickle. Can I add more hot oil after cooling ? Can you tell me where I went wrong. I did not miss out on half cup of vinegar. I used jaggery instead of sugar since I am diabetic. Please reply. Shall appreciate. Thx Veena.
@@Amelia-zb8iw , the masala quantity is not so much that it would need 1 and a half cups of oil. See the video and you'll understand what I mean. I'm wondering if you got the quantity of masala wrong. Also, this is a low oil pickle, that is, after you pour it into a jar/bottle, there'll be barely half an inch of oil above the level of the tendlis. I can understand if you had increased the quantity of oil by a quarter cup, because 3/4 cup of oil for 1/2 kilo tendli too will do. That's not too much. Only, you would get a thicker layer of oil on top at the end. And you say, even after adding 1/2 cup plus 1 cup more of oil, there's still no oil above the level of the tendlis? This is very hard to understand. Did you use more than 1/2 kg tendli? Or perhaps you didn't dry the cut tendli enough and so the volume of the tendli was much more? I'm sorry, Amelia, I can't think of any other possible reason. I suggest you watch the video again and compare the quantities of all the ingredients again and then perhaps you'll be able to pinpoint which measurements were not right. But anyway, if the pickle is tasting OK, and you don't need to make any other modifications, then you can surely heat and cool some extra oil and add it to the pickle. Because there should be at least a thin layer of oil on top. (But I'm really puzzled. Trying to imagine 1/2 kg dried tendlis and 1 and 1/2 cups of oil! And still no oil layer on top.) I really hope you'll find out where you went wrong.

After the pickle matures for around 10 days, it will stay good outside the fridge for some weeks when stored properly. But to be on the safe side, you could transfer it to the fridge around a week after maturing. In the fridge, it will stay good for months.
Thanks for the appreciation, Sreelatha. Apple cider vinegar gives a fruity flavour in cooking but it isn't a good option when it comes to pickles or pickling. In pickles, regular vinegar adds to the taste and also acts as a preservative. So don't use any substitute in place of vinegar.

Yes, of course Issac. Sun drying is best. But don't over dry them. Overdrying will dehydrate the tendli slices too much and make them tough.

Yes, you can, Ella. Only let it thaw completely first. Then rinse it with plenty of water and squeeze out the excess water. After that proceed as explained in the recipe.

@@PataCake Hi Veena. I used half a cup of oil to saute the spice masala but noticed while stirring the masala the oil was not enough so I added another cup to it and continued with the recipe till the end.
I then poured it into the jar, there was no oil above the pickle.

@@Amelia-zb8iw , the masala quantity is not so much that it would need 1 and a half cups of oil. See the video and you'll understand what I mean. I'm wondering if you got the quantity of masala wrong. Also, this is a low oil pickle, that is, after you pour it into a jar/bottle, there'll be barely half an inch of oil above the level of the tendlis. I can understand if you had increased the quantity of oil by a quarter cup, because 3/4 cup of oil for 1/2 kilo tendli too will do. That's not too much. Only, you would get a thicker layer of oil on top at the end. And you say, even after adding 1/2 cup plus 1 cup more of oil, there's still no oil above the level of the tendlis? This is very hard to understand. Did you use more than 1/2 kg tendli? Or perhaps you didn't dry the cut tendli enough and so the volume of the tendli was much more? I'm sorry, Amelia, I can't think of any other possible reason. I suggest you watch the video again and compare the quantities of all the ingredients again and then perhaps you'll be able to pinpoint which measurements were not right. But anyway, if the pickle is tasting OK, and you don't need to make any other modifications, then you can surely heat and cool some extra oil and add it to the pickle. Because there should be at least a thin layer of oil on top. (But I'm really puzzled. Trying to imagine 1/2 kg dried tendlis and 1 and 1/2 cups of oil! And still no oil layer on top.) I really hope you'll find out where you went wrong.

Mam how many days can I store it
After the pickle matures for around 10 days, it will stay good outside the fridge for some weeks when stored properly. But to be on the safe side, you could transfer it to the fridge around a week after maturing. In the fridge, it will stay good for months.

Thanks for the appreciation, Sreelatha. Apple cider vinegar gives a fruity flavour in cooking but it isn't a good option when it comes to pickles or pickling. In pickles, regular vinegar adds to the taste and also acts as a preservative. So don't use any substitute in place of vinegar.
