- Today I am recreating El Paso, Texas famous Chico's Tacos right at home. You guys requested this so here we are. I am taking a simple approach and making it delicious.

INGREDIENTS
1 lb (454 g) lean ground beef
1 1/2 tsp beef bouillon powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper
18 to 20 corn tortillas
oil for frying
8 oz (227 g) mild cheddar cheese
**TOMATO BROTH
6 to 7 (710 g) Roma tomatoes
1 small onion
6 cloves garlic
3 Tbsp (30 g) chicken bouillon powder
8 1/2 cups (2 liters ) water
salt to taste

I was excited to see this in my feed as it's something from my hometown. To note Chico's doesn't strain their broth and it's honestly one of the things I don't like about eating them.... all those tomato skins can sometimes gross me out but I still eat it lol. And yes the cheese has changed over the years but I've made my own chico's and mild cheddar works really well.
I wasn't sure because it was so long ago that I had it. I remember the one time I had it, the broth was super watery, but good. I drank it all up. 😂🙏 I probably should have researched first. 😬
@ The broth is still super watery lol I think your video is great! You can't go wrong with straining your broth just makes it more enjoyable to eat/drink.
I like using an old fashioned food mill for my tomatoes, goes faster than the sieve.

Yes I heard the company they use to get that fine grated cheese closed so they just started using regular shredded cheese i use the Mexican Blend when i make mine its closest to the original cheese they used not to sharp but still flavorful and fine😊

The cheese they would use was Longhorn cheese. It melted perfectly. I used to love dumping my crinkle fries into the leftover broth.

We were sent to EP from Germany thanks to the military. Our neighbors in Germany came from EP. They made a list of where to go lol....I've been here almost 3 yrs and have come to like being here. I'll for sure miss the food when our time here is done.

Grew up in El Paso, live in San Antonio now. Going to Chico’s after a night out at Tequila Derby, soooo good. Their hotdogs were good too. Thank you for posting this. I always do a deeper fry on the flautas and lose so much meat. Now I know better!
Edit: I also love that you use your fork correctly for this. So many friends and family try and break the flautas with the fork as if it is not in broth.
I've had these before and oh my gosh they're the best!! Especially with tons of shredded cheese, tomato broth and spicy green salsa

I use to work @ Chicos way back when and you almost have all the ingredients right, they actually added a bit of jalapeños to the tomato garlic and onion, it makes a big difference in flavor. You always have the best recipes, fan from Chuco town.

Ahhhh Chicos Tacos from my hometown. You are correct the cheap original Goverment cheese was replaced years ago. The new cheese is ok. They do not strain their sauce. You forgot to make some crinkle French fries to dip into the sauce. Looks good I may have to make some this weekend. 👍🏼👊🏼👊🏼👊🏼

The fake cheese was the GOAT. I lived off mountain Ave and went to rusk elementary and the best memory as a kid was when my dad would come home before his band practice and bring chicos. I didn't grow up on mc ds or any other fast food. This was mine. So nostalgic!!!

I've heard of Chico's for years, but never have eaten there. I don't go through EP very often. They look great. I've heard its a love -hate thing with Chico's. You either love them or hate them, but those that love them swear by them.

The title took me back 26 years, thank you. If you’ve never been it’s a must eat place like Little Diner in Canutillo 20 minute drive west of El Paso. It’s the tail end of Texas before New Mexico.

Thank you for the recipe! I just made these and they were delicious! My whole family loved them. The only thing I changed was that I used the tomato/chicken bouillon (the same one you used for your Spanish rice recipe) and it turned out perfect 😋

Chico’s was my go to place when I was in High School. My wife makes Chico’s too. I’ll ask her to try your recipe.
When I lived in El Paso it was more of a shredded American. Late 80's-early 90's. My college & early marriage late night go to when we didn't have much money. It was often our first place to eat out when going to El Paso to visit family. Just for the nostalgia. I'll make this soon but yes, I've got to make a green salsa! ❣🌮

Eons ago, I used to make rolled tacos all the time... then I moved from southern Arizona to Oklahoma. The first time I tried to make them there, the tortillas kept cracking when I tried to roll them... I couldn’t figure out the problem, and then realized the tortillas were made in MINNESOTA!!!😂😂😂 You definitely need good, fresh tortillas to make rolled tacos, and those look really amazing!!! I ended up moving back home eventually, so fortunately I have easy access to fresh tortillas again, and will have to try these!🙏❤️
