Whole Wheat and Honey Sandwich Bread!

  • Follow along as we make our delicious Whole Wheat & Honey sandwich loaf. It's made with fresh milled flour from organic red and white wheat berries. The eggs we use are from our chickens and we try to source our honey locally when possible. It's so good - hope you give it a try!
    The recipe:
    Here's the recipe for a single batch (which makes 1 -12" loaf pan or 2 -8" loaf pans) (I double my recipe and make 3 -10" loaf pans):
    1 1/2 cups hot water
    1/3 cup extra virgin olive oil
    1/3 cup all natural honey
    2 tsp salt (I use pink Himalayan salt)
    1 egg
    Mix the above ingredients together first in the mixer.
    4 - 4 1/2 cups freshly milled flour (3 cups wheat berries) (2 parts hard red wheat to 1 part hard white wheat)
    1 Tbs yeast
    Add half the flour to the mixer, then add the yeast, then add the remaining flour. Let mix until the bread hooks scrap the side and bottom clean (6-10 min depending on mixer)
    Let the dough rest for 10 minutes.
    Let the dough rise in the mixer until it doubles in size.
    Then remove and shape, and put in greased loaf pans. Let double in size, then bake.
    Bake 350 for 30 min
    The mixer I use is the Ankarsrum. The flour mill is called the Wondermill. Both are available on Amazon I believe!

    Love the Baby Chicks....I fell broke my hip....and can no longer have my Chickens. MISS THEM. AND YOUR EGGS....so beautiful. You are blessed. Will be trying recipe doubled

    Hi again. You helped me out with your Ankarsrum toast bread and thought I would try this recipe as well. My first batch was quite dense and I noticed that I did not get anywhere near the same rise in the proofing that you did. I tried again and still not much proofing in the Ankarsrum mixer bowl so I put the loaves in the baking dishes and proofed them for about an hour. They rose quite nicely but the bread turned out a bit dry and crumbly. I suspect I over-baked that batch. Any thoughts on why my proofing experience may be so different than yours? Thanks and I enjoy your videos.

      How much did your dough rise during the bulk rise? Double? Try letting it go a little longer so it’s 2.5 x the size. Also, make sure your yeast has not expired. I’m not certain it would make a whole lot of a difference but did you use olive oil versus another? Just trying to troubleshoot…
      For the dry/crumbly, yes I think perhaps it baked too long. You could try removing from the oven a little earlier, perhaps after 27 or 28 minutes?

      @@farmbread I don't think my yeast is expired as the proofing in the baking dishes on my second try was very good. I did use olive oil. I'll be giving it another shot this week so will let you know. Thanks

    Di you have any experience baking in a lidded Pullman pan? I have a 13x 5 I think? It's like 2 loaf pans but I haven't the slightest ideas how to use it 😂

    Where do yu get the berries and grains from?

      Well, that’s a great question. I only buy organic wheat berries and was sourcing through breadtopia.com (I believe they’re in Iowa). Most of their supply came from Central Milling.
      Unfortunately since our move 1.5 years ago, I haven’t found a good local seller. The cost of shipping has increased so much over the last two years, it’s been a challenge finding something local and/or affordable. I found a local farm in Coventry, CT, but due to a wet summer, the crop was no good. So it’s been challenging.

      Absolutely!
      So one thing right off the bat, I only use the dough roller, I don't use the dough hook for this recipe.
      To begin, I add the water, olive oil, honey, salt and eggs to the bowl and mix on low (or med-low) for about 30 minutes. Sometimes I need to break the yolks with a fork. Once combined, I add half of the flour (about 5 cups) to the bowl and mix together again on med-low, until all of the dry ingredients are mixed into the liquid ingredients. Then I add the dry yeast, and mix again on med-low for about 20 seconds until the yeast is blended into the dough mixture. The mixture is still pretty moist at this point. Then I add the remaining flour one cup at a time with the mixer closer to medium speed. Once it's all combined, I mix on med-high for about 8 minutes. Once it's finished mixing, I remove the dough roller and scraper, cover the bowl and let the dough rise anywhere from 1.5-2 hours until it's double in size.

I have to say, though, that you got me thinking about purchasing the grain and a grinder. I love baking but I'm fairly new at this, perhaps when I feel more confident I'll try it your way.😊

      I can relate! It took me a whole year to decide to buy the mill and wheat berries (actually I asked my hubs for it for Christmas)! But I'm so glad I did, and I'm sure you will be happy once you're ready. It will be nice to try the recipe with purchased flours first, and then you'll have a good comparison if/when you decide to buy the mill.
      One thing to note - if you're using purchased flours the liquid content can be a little off. You may need to add a little less water or add a little more flour (the latter is probably easiest). There's a lot of intuition in breadmaking, so don't be scared to make adjustments if you think they'll help!

      Hi! Great question. I put it in a plastic ziplock and try to get as much air out as possible. Then I put that into a second ziplock. It works well!

      Actually I do. We’ve replaced almost all of our teflon non-stick cookware and just have a few items left like the bread pans and a crockpot. We’re trying to be cost effective/ cost conscious as we do it. If you have any recommendations for good bread pans that aren’t coated in teflon please share! Thanks for asking!

      I also got rid of nonstick items and kept only the traditional metal. Coated with oil, they bake down nice and smooth. I ditched the frying pan and anything else. It’s hard to switch, I agree. Some were even flaking off, and I didn’t realize how dangerous they were. But hey, we were the generation that drank Koolaid out of aluminum pitchers with faces on them! Amazing we lived at all! Thanks for your wonderful recipe.
