      Hi! Yes absolutely- the Ankarsrum comes with two mixing bowls and multiple beaters to mix doughs, batters and whips. It’s extremely versatile, well beyond what I’ve mentioned if you purchase additional attachments like a blender, meat grinder and pasta attachments. I mainly use mine for bread making, cookies and cakes. ☺️

    how does it work with small batches? i only have one kid and no food business, but make a lot of things that are single or even half batches, of bread in particular. i know the mixer has a smaller bowl option, but it doesn't accommodate the dough accessories, does it?

      Hi! The second bowl that comes with the Ank is for batters, whips and beaters, so not really for bread making. The regular bowl can handle small batches with proper positioning of the roller during the mixing and kneading process. For myself, I really needed a strong mixer to support large batches. I think if you are only using it for small quantities you can probably find a more economical option. Unless you’d be using it for other baking and cooking needs, it’s very versatile. But if only for small batches of bread making, I’m not sure it would be worth the cost. Hope that’s helpful for you!

    Great video. Waiting for my mixer to arrive tomorrow. I have had 2 KitchenAid mixers fall apart with this type of dough. Can't wait to try it! Loved the addition of the kids and the dog getting a drink LOL

    What amount of flour in a recipe is the max for using the roll instead of the dough hook?

      Great question! I’ll start out by saying I don’t really know the answer but based on my experience, I don’t go past 1600g using the roller. I haven’t tried a larger batch than that with the hook, but I’ve read from others that they’ll use the hook for larger batches. I hope that helps! Thank you!!

      Hmmm, I’m so sorry to hear this! Are you using the plastic bowl with the correct beaters? I’ve not had any issues with whipped cream or meringue. Could you be beating for too long? Or too slow?

      Hi! I purchased the cloches at breadtopia.com. They’re in Iowa I believe. They work very well and don’t need any seasoning or oil. Just be sure to put them in the oven before you preheat it, so they don’t crack. ☺️

    Why don't people just knead with the Ankasrum, or do slap and fold kneading? Is it something peculiar to sourdough? Do people like to work sourdough less?

      You know, I get this question a lot! I mix by hand out of habit and tradition but there’s absolutely no reason not to use the mixer. I do use it for denser recipes like bagels that require a little more elbow grease. I have not tried using the mixer for kneading or folding/stretching sourdough but I know there are people that do that. It’s on my list of things to try out! Hope that’s helpful!! ☺️

      Yes, precisely!! You really don’t need more when starting out. It will still be delicious. Keep it simple so that the process doesn’t become overwhelming. And once you’re more experienced and ready, you can start playing around by adding additional stretching and folds to see the results, but it’s not necessary. ☺️

    Here in Australia this machine is $1349 so it is a lot of money if you can't get to work right. We can't buy the Bosch mixer here so I was looking at this but still not sure.

      Yes that definitely makes the decision more challenging. It’s not that it doesn’t work right, it’s more about getting to know how it operates and getting past the learning curve. It’s a fantastic machine that’s incredibly versatile- can be used for many baking and cooking applications. Just plan to take some upfront time seeing how it works and playing around. If you do, I’m sure you’ll be happy with your decision. Best of luck, and don’t hesitate to reach out with any questions!

    Can you use it for heavier whole grain sourdough recipes? For health reasons we eat whole grain sourdough.

      Great question! I don’t see why not. I fresh mill wheat into whole wheat flour and use that for my whole wheat and honey loaf, and use the Ank to make a batch of 3 at once. However, I don’t use the mixer as much for sourdough recipes as I do for yeasted loaves. I hope that’s helpful!

    This so helpful! Thank you. I’ve been using FMF for 5 months now and my ank for 3. I just now realized I haven’t been using enough flour and measures don’t always cut it. I would love to see a video on your bread business. People I have shared my bread with are encouraging me to sell it but I live in the city and work. Not sure if I can pull it off.     I hear its a fantastic mixer but at that price thats a minimum expectation . I may yet get one but right now the difference in product between what Ankarsrum and my Bosch Mixer can produce are not near as separated as the cost of each .

      I would say wait until either your Bosch has seen its final days or you feel it’s just not giving you the result you desire. The Ank is wonderful but definitely an investment.

      You’re not the first to ask! I probably should use the mixer, I have historically hand mixed my sourdoughs so I automatically just do that. It would work fine though, there’s no technical reason that I don’t use the mixer. ☺️

    Do you know what size loaf pan you used? It looks slightly bigger than a normal size bread loaf pan. Does it matter what size is used?

      Hi! The pan I used is 9x5”. The size doesn’t really matter as long as it’s a typical/standard loaf pan. I’ve recently purchased cast iron to try and get rid of all of my non-stick teflon type pans and that works too. The size is slightly different. Hope that helps! ☺️

    I made the error of buying this piece of junk. It is utterly useless to make dough requiring a high gluten development like pizza dough or baguette. Prably ok for sandwich bread. If you are serious about bread, go for a spiral hook design like the Famag Grilletta multispeed.

    Thank you for doing this 👍 it's taken me about 15/20 batches of dough to finally see what the Ankarsrum can do ! I think your point No. 1 was spot on... It's nothing like a stand mixer....and I was getting frustrated. To be honest, I was going to sell it. But now I'm producing my best bread ever. The machine asks much more of the user...like you said...move the roller, watch and check dough consistency, etc. I read, on a dealer's web site, that the manufacturers added a dough hook when they introduced the machine to the American market. My dough hook remains untested, so I can't comment on its effectiveness either way....but since the machine was originally designed for the roller....I'll go with that. Thanks again for the video, I think it will help a lot of people (like me) persevere with their Ankarsrum.....and make better bread :) Best wishes from the UK 👍

    I have my grandmother's old kitchen aid mixer. It has don't good by me over the years, but it has always been a bit small for me. In researching, I immediately had interest in the ankarsrum mixer. Love your videos on this. Thank you so much as it is bringing me closer to making an investment in this mixer. 😊 Also, where do u get your special bread flour? Thanks again.

It’s unfortunately expensive to ship now so I’ve been trying to find more local mills on the east coast such as Lindley Mills and also Janie’s Mill. I listed them in order of preference. There’s also Azure Standard which has a good bread flour and special milling process that doesn’t remove any part of the wheat berry, but in turn has more of a whole wheat flavor so it’s a trade off. Janie’s mill is similar in that it tastes more like a whole wheat flour. Hope that’s helpful! ☺️

    Thank you for your video! Very helpful. I just got my Ankarsum and am in that learning curve. My dough keeps sticking around the roller so I have to stop to take it off. How do I stop that from happening??

      Thank you so much! If the dough is working its way up to the top of the roller, the roller is most likely too close to the edge of the bowl. Adjust the arm slightly towards the center of the bowl and secure it. Then turn the Ank back on to test it out. If the dough is still climbing up, position the arm a little further into the center. That should do the trick! ☺️

    I am trying them right now and getting ready to bake them. They are resting. I had a difficult time with the dough b/c it was too loose- not firm enough to handle, but I worked through it b/c I’ve been baking SD bread for over 20 years. Maybe I need more flour. Also, BTW, I bought your book and love the Cinnamon Bread recipe! Great! Thanks!

    Have you used fresh milled flour for this recipe? Soft white berries or hard soft? Would it change the process listed in the ankarshrum book?

      Hi! Great question. I haven’t used FMF for this recipe but I have used different bread flours that are a superfine ground whole wheat. My kids and my preference is definitely an even ratio or greater of the typical sifted bread flour. We prefer the flavor, but the texture is still very similar. If you were to try FMF I would recommend hard white or hard red. Pay close attention to the dough mixture when adding your final cup of flour so that you have a good gauge on how much or little to add. Other than the amount of flour, using FMF really shouldn’t change the process much. I hope this helps! Thank you so much!

    Hey, thank you so much for your videos! I just received my Ankarsrum yesterday and made a half batch of Toast Bread right along with you today. You are a fabulous resource for sure. I have a goal of making bread with sprouted heirloom grains but not drying and then milling, but using the meat grinding attachment to grind the just sprouted grains and go straight to baking. I've experimented with making my own botanical yeast sourdough starter from apples and raisins.. All of my experimenting has been done without a mixer so I'm thrilled to have the "assistant" . Have you made heirloom wheat bread from sprouted grain in this manner? I am so crossing my fingers that you have. Yes, your cute daughter and her feathered friend are a wonderful addition, just beautiful!! Priscilla

    Nice video and beautiful loaves--your little one and her friend are beautiful, too! 🥰 Didn't it occur to you to watch any of the AnkarsrumUSA/Bread Beckers videos? You could've saved yourself a lot of aggravation--they've been using the mixer for a good 20 years and know it inside out. Lynn Junk is the Canadian distributor and her video is also extremely instructive. Incidentally, mine is an Ankarsrum family--there are probably a dozen among us and a few of my friends. Its engineering is brilliant and as to the cost--buy once, cry once.

I've never before made a video but I'm thinking of doing one to demonstrate some of the "cooked" meringue buttercream frostings.     After you crack the egg, what do you do with the egg shells? Do you rinse them? How and where do you store them until you have a batch to crush? 😇

      Hi! Great questions! I quickly rinse the egg shells and then leave them on the counter to dry. Once dry I store them in a plastic bag with the top open, under my kitchen sink. I add to the bag until I have a decent amount and then place them on a baking sheet to bake. Many times I’ll bake them after using the oven for something else. I’ll turn off the heat and put them in the oven for a half hour or so. Then crush them inside of a plastic bag with the flat side of a meat tenderizer. Hope that helps!
