    Thank you for doing this 👍 it's taken me about 15/20 batches of dough to finally see what the Ankarsrum can do !
    I think your point No. 1 was spot on... It's nothing like a stand mixer....and I was getting frustrated. To be honest, I was going to sell it. But now I'm producing my best bread ever. The machine asks much more of the user...like you said...move the roller, watch and check dough consistency, etc.
    I read, on a dealer's web site, that the manufacturers added a dough hook when they introduced the machine to the American market. My dough hook remains untested, so I can't comment on its effectiveness either way....but since the machine was originally designed for the roller....I'll go with that.
    Thanks again for the video, I think it will help a lot of people (like me) persevere with their Ankarsrum.....and make better bread :)

    I had one many years ago and could not figure it out and so I sold it and I did get what I paid for it. It was before TH-cam so there wasn’t anyway to get help. I was working full time and just didn’t have the time. I then bought a Viking mixer and I do love it.

    Always love when you post!! An earlier video of yours helped me to decide to by an Ankarsrum. We love it! We've always used the roller, but after watching this I moved it a little further away from the side and I liked what it did as far as kneeding! We decided to make challah with it for the first time last night... the dough seemed really wet. Encouraged by your video, we went with our instincts and added extra flour because it seemed too wet. (The bowl was coated with a thin layer of dough - I started to overthink it wondering if it was the recipe and supposed to be that way - or maybe because we use freshly ground flour...) we just added more until the sides and bottom came clean and it turned out perfect! Thank you!

    The machine is very versatile. I recently made German fine "Bratwurst" (fry sausage) with my Ankarsrum and a hand blender stick.

    This so helpful! Thank you. I’ve been using FMF for 5 months now and my ank for 3. I just now realized I haven’t been using enough flour and measures don’t always cut it. I would love to see a video on your bread business. People I have shared my bread with are encouraging me to sell it but I live in the city and work. Not sure if I can pull it off.     Hey, thank you so much for your videos! I just received my Ankarsrum yesterday and made a half batch of Toast Bread right along with you today. You are a fabulous resource for sure.
    I have a goal of making bread with sprouted heirloom grains but not drying and then milling, but using the meat grinding attachment to grind the just sprouted grains and go straight to baking. I've experimented with making my own botanical yeast sourdough starter from apples and raisins.. All of my experimenting has been done without a mixer so I'm thrilled to have the "assistant" . Have you made heirloom wheat bread from sprouted grain in this manner? I am so crossing my fingers that you have. Yes, your cute daughter and her feathered friend are a wonderful addition, just beautiful!!

    What a nice video. Thank you for sharing your tips and for making it all so interesting. I don't have one of these mixers. Living alone, and living with heart disease, I have to watch my carbs intake, so a small loaf of bread once a week is all I can have, and that can be done with my dough whisk.       @@farmbread You're very welcome, and thank you for your nice response. When you said your older mixer totally fell apart when you were using it, what exactly happened? Did parts break off when it was running? My sister now has my 35 year Hobart-spec KA mixer and it is still going strong, but I wouldn't get a new one, not considering the many bad reviews that I've seen. May I ask which state you're in?       It seems like so many products aren’t made as well as they used to be, sadly. My first mixer broke during the kneading process of a large batch. The dough hook disconnected and broken little metal parts fell onto my dough! 😬 It was fairly inexpensive and non name brand so I got what I paid for 🤷‍♀️. Lesson learned! 🤪

    I made the Ank recipe for baguettes using the hook. I’m a new user. I will try it again with the roller. Are liquid always added first? What type of yeast do you use? Do you proof it first? I also just got a mill (going in deep here! I have made bread by hand for over 30 years with conventional flour but wanted to learn something new). I know the difference between wheat varieties and my question (another one…sorry) is do you let the home milled flour rest at a certain point to absorb liquid? At what point? Thank you for taking the time to make these videos. They’re very helpful, encouraging and informative without being too long.
    I had a chicken named Attila the Hen once so any TH-cam channels named after your feathery friend sounds good to me!

      @@farmbread thank you for answering all my rather extensive questions, that was helpful! My baguettes turned out pretty well. I used a perforated baguette pan and the shape wasn’t as rounded as I would have liked (I need some practice with shaping) but they tasted great!

    Didn't it occur to you to watch any of the AnkarsrumUSA/Bread Beckers videos? You could've saved yourself a lot of aggravation--they've been using the mixer for a good 20 years and know it inside out. Lynn Junk is the Canadian distributor and her video is also extremely instructive. Incidentally, mine is an Ankarsrum family--there are probably a dozen among us and a few of my friends. Its engineering is brilliant and as to the cost--buy once, cry once.

      I've never before made a video but I'm thinking of doing one to demonstrate some of the "cooked" meringue buttercream frostings. I haven't made them but I KNOW that they can be done in the bowl with the roller/scraper.

    Thank you for your video! Very helpful. I just got my Ankarsum and am in that learning curve. My dough keeps sticking around the roller so I have to stop to take it off. How do I stop that from happening??

      Thank you so much! If the dough is working its way up to the top of the roller, the roller is most likely too close to the edge of the bowl. Adjust the arm slightly towards the center of the bowl and secure it. Then turn the Ank back on to test it out. If the dough is still climbing up, position the arm a little further into the center. That should do the trick! ☺️

    Thank you. I have a big problem with the mixer. I can't whip with him. Since I bought it. Every whipping cream and every marunge just breaks. It's so frustrating 😢

      Hmmm, I’m so sorry to hear this! Are you using the plastic bowl with the correct beaters? I’ve not had any issues with whipped cream or meringue. Could you be beating for too long? Or too slow?

    Here in Australia this machine is $1349 so it is a lot of money if you can't get to work right. We can't buy the Bosch mixer here so I was looking at this but still not sure.

      Yes that definitely makes the decision more challenging. It’s not that it doesn’t work right, it’s more about getting to know how it operates and getting past the learning curve. It’s a fantastic machine that’s incredibly versatile- can be used for many baking and cooking applications. Just plan to take some upfront time seeing how it works and playing around. You guys that live in the USA have it lucky when it comes to gadgets to buy. Australia used to be that way but now we make nothing and become a nation of importers.

I’m using Einkorn wheat berries from Ancient Grains, milling them with the Wonder Mill and have been told that Einkorn flour is different than most. Please let me know if you have ever used Einkorn? I’d like to know your experience and tips if you have any. Thanks again!

    I made the error of buying this piece of junk. It is utterly useless to make dough requiring a high gluten development like pizza dough or baguette. Prably ok for sandwich bread.
    If you are serious about bread, go for a spiral hook design like the Famag Grilletta multispeed.
